Only available on the brunch menu at Bibi's Bakery, this tartine topped with avocado, feta, and sun-dried tomatoes is better than their other sandwiches. Bibi's is a cute cafe in St. Andrews, Scotland, that recently expanded (they opened a cupcake shop two streets over and a clone of the original Bibi's, also in Edinburgh).
The menu is large and relatively varied, with a daily soup and a special panino each day. This open-faced sandwich begins with a base of homemade toasted walnut bread that's just crunchy enough to stand up to the luscious avocado and the smooth, creamy feta. The arugula adds a bite, while the butter lettuce and sun-dried tomatoes brighten everything up a bit. The drizzle of balsamic vinegar finishes it off with an acidic note, rounding everything out.
