Things I know I want when I'm drinking beer: cheese. Things I learned I want when I'm drinking beer when eating The Kimcheez ($7) at Mission watering hole Gestalt Haus: kimchi. Oh, yes. The combination of sharp cheddar, crunchy, pungent kimchi, and rich, garlicky aioli is made to be enjoyed with a glass of quality beer (of which Gestalt has a fine selection), particularly when it's served on excellent quality marbled rye bread. The cheese could have been a little more melted and I could have gone for some more kimchi (the distribution was a little uneven as well), but overall, the sandwich packed an excellent punch of flavor.
