Cook the Book: 'At Home with Madhur Jaffrey'

Madhur Jaffrey has made it her life's mission to introduce the west to the vibrant cuisines of India.

Beginning in 1973, Jaffrey penned An Invitation to Indian Cooking, a volume that had much to do with so many Indian dinner parties and countless curries being prepared in American and British kitchens. Something about her recipes and writing style makes the cuisine seem exotic and enchanting while still entirely doable. Over 30 of her books have been published in the U.S. alone.

Her latest, At Home with Madhur Jaffrey is a collection of recipes from India, Pakistan, Bangladesh, and Sri Lanka deconstructed, simplified, and accessible enough for new cooks and weeknight meal-makers. In classic Jaffrey style, these recipes, while pared down, manage to retain their deep, spice-filled flavors without too much time spent chopping, soaking, sizzling and grinding whole spices.

It's the sort of book that, after preparing a few recipes, will have you thinking that whipping up a dal, korma, or kebab on a Tuesday night doesn't require all that much more effort than getting takeout from the local Bombay Palace. And with recipes this simple, flavorful, and satisfying, you might even consider tossing out those Indian delivery menus.

We are going to break out the cumin, fennel, and mustard seeds for a week's worth of recipes from At Home with Madhur Jaffrey. We'll be visiting Sri Lanka for dishes like Beef Smore and Rice with Cilantro and Lemongrass, traveling to Bangladesh for Roasted Moong Dal with Mustard Greens and serving it with a sweet-spicy take on raita, Yogurt with Pineapple.
