The Caseus Grilled Cheese truck is the mobile offshoot of the Caseus cheese-shop-cum-bistro in New Haven. Using up the end bits of provolone, Swiss, comte, gruyere, gouda, and sharp cheddar from the shop, they melt the blend on buttered, toasted sourdough slices in the truck to order. In addition to the classic bread-plus-cheese ($5) you can throw on any number of add-ons for a buck each: guacamole, sweet applewood bacon, roasted red peppers, grilled onions, Jambon de Paris, tomato, or arugula. Look for daily specials on the colorful chalkboard out front.
New Haven has a long tradition of food trucks, both parked across from the Yale medical school on Cedar Street and over at Long Wharf. But this relatively recent addition (it's been roaming the campus streets since February 2010) is a popular one among Yalies.
According to the Twitter, they have an Ash Wednesday special today: spinach and Cabot cloth bound cheddar. I guess anyone who gave up grilled cheese for lent is out of luck.
