The name "scallion" applies to several members of the onion family, including immature onions or green onions, young leeks, and sometimes the tops of young shallots. Scallions are characterized by a long and thin white base that has not yet developed into a bulb and long straight green stalks that resemble large chives.
Both the white base and the green stalks are commonly eaten in a variety of dishes and used as a garnish. The flavor of scallions are milder than mature onions but stronger than chives, another close relative. We compiled a list of great dishes with scallions, after the jump.
Purchase only green crisp tops and white bottoms. In general, the more slender bottoms will have a sweeter taste.
To prepare scallions, rinse them thoroughly (dirt may be lodged between the leaves). Make sure to trim away any wilted parts and the tip of the white root. You can use the entire scallion either chopped or sliced to add flavor to your favorite recipes.
To store scallions, remove any rubber bands, wrap the whole trimmed scallions in a paper towel, and put them in a zip-top bag in the refrigerator. They will keep for up to a week before wilting. Below is a compilation of delicious and flavorful recipes featuring the seasonal scallion.
