Last week over on the Weekend Cook and Tell we wanted to know how all of you were faring with the limited selection of produce available this time of year. Thankfully, no one has gotten scurvy, and all of your responses seem like everyone is cooking incredible meals with the limited fruits and vegetables that winter brings. Here are some of our cold weather favorites:
Onepot made a loosely interpreted version of colcannon, an Irish dish for the winter solstice. Topping off this warm plate of cabbage, leeks, kale, and potatoes with a runny egg looks like an ideal cold weather meal.
Using kale as a mere garnish seems like a waste to scotter who likes to braise it with olive oil, garlic, red pepper flakes, anchovies, chicken stock, and cider vinegar. According to scotter, the braising liquid is the best for sopping up.
chickenlivers staves off the winter blues with plenty of orange, namely a ton of clementines and copious amounts of butternut squash soup.
dhorst has a few tricks up her sleeve for coping with winter vegetable blues. Lettuce on sandwiches is replaced by cabbage, plentiful citrus is used in sangria, and with fresh tomatoes not being an option, the cans come out for a family-pleasing lasagna.
Having the foresight to think ahead for the winter months, thatgrrl put up enough jars of tomatoes and peppers to last her through the season. She can only hope that her cache doesn't run out before the spring.
Cantaloupe Alone has used up the dregs of the last CSA box of the season. Now is the time to break out the extra flavorful ingredients to help out the cardboard-tasting vegetables that line supermarket shelves this time of year.
