Weekend Cook and Tell Round Up: Pancakes

Who knew that the humble pancake would make this week's Weekend Cook and Tell one of the most popular topics yet? No matter whether you call them—hot cakes, flapjacks, or griddlecakes—this pan-fried treat was the inspiration for some pretty great responses this week.
Let's hope that our love for pancakes turns out better than this line that BKNYDan quotes from iconic comedian Mitch Hedberg: "As a comedian, it's important to both start and finish the show strong. I can't be like pancakes: all exciting at first, but by the end you're f___ing sick of them!"
betteirene has an all-purpose batter that is used for everything, from aebleskivers, strawberry shortcake pancakes, waffles, and bacon-cheddar waffles. A cast iron skillet is the key, heated medium-high and wiped with a paper towel dipped in oil in between batches.
Both Cassaendra and maxcriden have had a hard time with bánh xèo or Vietnamese crepes; luckily AnnieNT chimed in with her mother's secret recipe that includes some beer mixed in with coconut milk.

Savory and slightly creepy potato and corn pancakes were on the menu for whoot over the weekend. "The little tendrils of potato shreds stuck out like spider legs. Cool thought for a Halloween meal!"
finsbigfan made a big batch of crepes as a midnight snack for her kids and their friends. The crepes were made from Alton Brown's recipe and filled with leftover roasted chicken and braised pork ribs, caramelized onions, spinach, and a bechamel made with cream cheese, thyme, and nutmeg.
kirbie had green onion pancakes on the brain for a while, and this weekend's challenge proved to be the perfect opportunity to make them at home.

Cassaendra made okonomiyaki. Filled with yakisoba and topped off with plenty of Kewpie mayonnaise, this one of my favorite pancakes of all time.
