katieeela - your reference to Joe Squared's "Rochester style" wings made me curious but from their website it looks like Joe Squared's wings are regular Buffalo wings. There is, arguably, a Rochester variant on the Buffalo wing but I've never seen them anywhere outside the Rochester area, certainly not by that name.

Had pizza last night at Cassie's in Englewood, NJ. They most definitely use a coal oven. They have a sister location in Orangeburg, NY. Both could be considered NYC area - but should at least be on the national map.

anthony's has 9 locations in florida now.
racks italian bistro and market is opening in north miami beach in 21 days.
mona lisa opened in deerfield beach in december 2008.

On October 7, 2008, Joe Squared installed the only coal-fired pizza oven in Maryland. Voted Baltimore's Best Pizza - square pizzas with thin, sourdough crusts. Everything on the menu is wonderful. The Rochester-stylewings are not to be missed, either - Check out www.joesquared.com

@everyone: I have to set aside some time to update this map. You've all given me some great new places that I haven't had time to place on here yet. Thank you all!
@gabagool: The coal typically goes in the chamber of the oven, same place the pizza goes. They usually push it off to one side and cook the pies on the other. Same with wood ovens.

I MAY be mistaken, Modern is one pizza place in NHaven that I have NEVER visited, though I have heard and read plenty about it.....but I DON'T THINK Modern is coal? Is it? Somewhere, somehow I got it in my mind that it isn't coal. I checked out the website, it never mentioned coal, did it?? Please if I'm wrong, fill me in. Thanks.

Oh yeah, one other question. I have read posts from people concerning coal burning ovens and some state that the coal is IN the main oven compartment, and others state that the coal is in a SEPERATE compartment? Any info? Thanks again.
