Ted Allen Cooks His Favorite Pretentious Foodie Bullshit Meal

Hey pretention is Ted's schtick, it's his gig, it's what he has done on every show he's had. Ted doesn't hold a candle to Colin Cowie, ya know.
Ted could make a hilarious 5 minute comedy schetch out of one of those baskets and trying to cook something edible. He could become a culinary Shatner and make a living spoofing himself. It's not like Ted doesn't know how he comes across. The show is stupid, but then the network has become the stupid contest network, hasn't it?

What's Your Favorite Mexican Soda?

For soda I enjoy Jarritos pinapple but my real favorite is not a soda, but is sold in every taqueria I ever been in, it's Jamaica. It's in the back next to the Horchata and it is the best thing ever.. I googled it once and it is hibiscus tea, made from dried hibuscus flowers. I could drink a gallon of it.

Best comfort foods to take for a hospital visit?

My daughter was in the hospital for a week a while back and I spent all day every day, there with her. There were two really wonderful food gifts, one was a shopping bag filled with tiny containers of salads from the Whole Foods deli, with crackers, juice and plastic spoons. The other was a batch of small, homemade scones and a jar of lemon curd. I hope your friend recovers quickly and completely, my daughter has.

So our Powerball is $245M. What would be your #1 food fantasy?

I would stop in New Orleans on my way to exotic cuisines around the world. I would start with po boys at Domilise's, move on to Dooky Chase's and everything between there and Brennen's with some coffee and beignets every morning. Yeah that would be my first stop.....

Do I need an immersion blender

I love mine. I use it for all of the above tasks and for making hummis, and white bean puree, which I love and I use it to whip cream and whip eggs for frittata or quiche. I use that immersion blender pretty much every day.

From Talk

How many do you have, and what spices can you not be without?

I have 22 on the shelf and another 20 or so in a box on the top shelf. I could not live without salt and pepper of course and dried thyme, coriander, cumin, cardamom, whole nutmeg, chili flakes, oregano, garlic and onion powder, smoked paprika, chinese 5 spice and chili powder. I also need to have soy sauce, sesame oil, sambal, siracha, hoisin, oyster sauce, seasoned rice vinegar, and red wine vinegar. I must always have fresh garlic and onions and fresh cilantro.

From Talk

What food smell do you hate?

I couldn't think of anything that I "hate" the smell of, so I read through all of the posts to see if there was anything that I remembered as being foul. Nothing, except burned microwave popcorn, which I find unpleasant, but would not put in the catagory of "hate". What I do find so vile that I do something about it, is garbage and spoiled or rotten food.....ew! I use a small plastic shopping bag for my garbage, and I remove it to the trash can in the back yard twice a day.

Coffee Maker Issue

I'd say go to a store and purchase a replacement carafe, in the event that the one you have has a spout that is, somehow, abnormal. I have a Mr. Coffee without this, or any problem. You could try another brand of carafe also, just check the measurements so it fits and the knob on top depresses the spring on the drip container, or just remove the spring. If you do remove the spring the thing will not stop dripping when the pot is removed. I know this because I have a thing about taking stuff apart and cleaning it and then reassembling, also I just love to see how stuff works....

From Talk

How do you like your eggs?

Lately I've been making Chinese scrambled eggs, which is: eggs, soy sauce, sesame oil and sambal in a bowl, whipped with a fork and into my non-stick skillet with a little olive oil spray. (I got this from an Asian food site) OMG this is a revelation and I eat it over rice. So yummy. I also enjoy baked eggs with any cheese (parmesan) and any herb (cilantro) and S&P. Until something better comes into my life, this is IT!

Moving My Kitchen

What @frizzaldo said. I have moved recently also and those big plastic storage bins from the big box stores worked perfectly for the food processor and heavy pots and pans and mixing bowls. After the move they have come in handy for general storage of stuff that isn't used everyday.

From Talk

Caring for wooden rolling pin

I, also, have a very old and heavy wooden rolling pin that I have used for many years and it was used by somebody else for many years before I had the pleasure of owning it. Mine has been in a shipping box for the past year, as I have been moving around and traveling. I just encountered it the other day and did give it a good wash with soapy, hot water, followed by an air dry, a rub with flour, a wipe down and into a drawer. I rarely use soap on mine, however after a year in a storage box and when creating with little kids yucky stuff gets on there that might require a soapy wash, but mostly just a wipe with a damp cloth and always air dry completely.

From Talk

What am I doing wrong?

Are you cooking on an electric stove? When you turn off the stove the burner remains hot for a long time after, so maybe that is why the potatoes are being burned. The same is true with a ceramic cook top. Move the pan off of the burner. Just a thought.......

The Food Lab: Homemade Mayo In 2 Minutes Or Less (Video)

I haven't bought mayo in a jar in years. When I learned to make mayo I was using a whisk, which made my arm tired, but then I got my first immersion blender and like magic, there was mayo! So easy, so fast, so inexpensive, so delicious. Why buy it?

What's the deal w/ pumpkin?

In other parts of our globe pumpkin is part of a daily, seasonal, diet. It is not always sweet or a jack-o-lantern. I have had some really fabulous savory pumpkin side dishes and I have an Afghani cookbood with many yummy recipes for pumpkin. Plus, there is alway pie, bread, cookies and custard, yeah, I'm ready for the great pumpkin that comes to America in the fall, after the harvest.

Ok- So What's Your Favorite Sandwich ?

Banh mi, of any kind, is the very best sandwich in the world, to me. The cuban sandwich is fabulous and not to be forgotten, the muffaletta. When digging around in my frig I usually make a chicken salad sandwich or ham and gruyere.

From Talk

Mayo or Yogurt? Potato Salad decision

How about forgetting about the mayo and/or yogurt and all of the dairy, and use a tangy vinaigrette then toss the just cooked potatoes in that vinaigrette, and forget about rincing under cold water. The hot potatoes will absorb the tangy vinaigrette. Then add all of the other ingredients, parsley, rosemary, thyme, oregano, dill, garlic, shallots, dijon and S&P. Yum! My take on potato salad.

Are you guilty of patronize chain restaurants?

I find myself in Starbucks and Peets sometimes for a shot or two, if you consider these to be restaurants. I enjoy the occasional In-N-Out and have gone with my cousin and her family to Outback Steakhouse. Outback suprised the heck out of me, I enjoyed it. Mostly I cook and sometimes I visit the local taqueria for burritos or tacos or Vietmanese shop for banh mi.

I am totally with @Saria about the inexpensive yummy food that is out there. I never feel guilty for enjoying food, if it's good.

Ideas to dress up boring pasta?

I'd ditch the red sauce altogether and try one of Mario Batali's pasta recipes, or just wing it with stuff in the frig. Saute some slice up bacon, throw in some onions and garlic and broc or asparagus or zucs and mushrooms, toss together with the pasta and add some grated parmesan. I'd add some herbs too along with S & P. Or I'd saute some hot italian sausage with onions and garlic and herbs deglaze with wine and throw in a can of diced tomatoes or fresh diced tomatoes and of course lots of parmesan. I've been doing this for awhile and my kids call it the anti-sauce. I always reserve some of the pasta water (salted water), which has a lot of the pasta starch in it and this will make a thick creamy little sauce when added to the finished pasta dish if sauce is too dry. There are so many things that can be sauted together to make a "sauce" something to dress the pasta. There are some great ideas posted here. Good luck with your, now, unboring dinner.

Wow...It's ALWAYS Good

I adore chicken salad. I make it many ways and every time it is great. I make asian chicken salad, with sesame oil, ginger and garlic and just a bit of cilantro as primary flavors along with the customary mayo, celery and scallions and whatever else you put in your chicken salad. Curry chicken salad with rasins and whatever green herbs are around and some chili flakes. Chicken salad with dried cranberries or dried apricots and rosemary. Mediterranean style chicken salad with kalamata olives and fresh oregano or dill and lemon zest, even a little feta crumbled on top. Chicken salad straight up with mayo and celery. I could go on and on. There are a thousand ways to go with chicken salad. My kids, when they were little, liked crispy, fried chicken fingers cut up and made into chicken salad with apples and celery. Yeah, I am going to have to make some now.

What's your secret kitchen "cheat" tool?

Sombody mentioned tongs, I never thought of tongs as a cheater tool, but if they are then my cuisinart, mandolin, immersion blender and garlic press probably fit in too. My rice cooker and the machine I use to roll out my pasta dough?

For me the real cheating tool is the garbage disposal, just push that stuff into the sink and it goes away. I love that and I lived without one while I was in the South last year, kind of a rustic existance for me.
