Oakland: Pizzaiolo Wuz Robbed
As a native New Yorker who has eaten at both places several times... who cares? I'm not saying there's not good pizza in CA, you just won't find it at either of these places. There's so much of that artisanal garbage out here with the corn and the potatoes and no sauce... blechh. I had Pizzaiolo's potato pizza, nothing to write home about. As for their take on a Margherita, it just tastes bland to me, from crust to sauce (the toppings themselves are of the highest quality, but once again the Californian philosophy of using pizza as a "toppings delivery system" seems to be at play.) As for Delfina, I've eaten there twice and both times the pizza came out pretty soggy thanks to a sauce that is so thin it may as well be V8.

i actually don't refrigerate pizza either, when i reheat pizza that's been kept at room temperature, the cheese remelts a lot closer to how it would on fresh pizza. as for critters, i use a zip-lock bag squeezed almost air tight and then put it back in the box. maybe it's just in my head, but i could swear my method is much better than the fridge.

I wish I could order a sourdough jack with real ground beef instead of whatever it is that they make fast food burgers out of. Everything about that sandwich is great except for the meat.
