i thought chilaquiles usually included eggs?
either way, when i make what i call "chilaquiles", i fry tortillas, top it with eggs, chorizo if i have any, cheese, and a similar red sauce--or, sometimes, guacamole (just as good a combo, if not better).

oh, and i'd also like to remind people that one instance of excess is not fatal or artery-clogging. if you're to the point where two bites of bacon and cheese will cause cardiac arrest, that is indeed very gross.

i actually made this about a week ago, on my roommate's suggestion/demand (he can't cook even the simplest of weaved-bacon treats). it was, for all you haters, delicious--even if it's not possible to eat more than one or two pieces.

it really does make a pretty novel hors d'oeuvre, especially if you drain the bacon adequately (!), so give it a try. and quit being so damn uptight!

love this blog...my favorite burgers that I've tried so far this year are:

Bonnie's Grill in Park Slope and Dram Shop in Park Slope...different animals but good in their categories....

One of the best fast food burgers I've ever had was in Sante Fe, NM at Lotta Burger with green chile sauce.

i ate chilaquiles in guadalajara all the time and they were DELICIOUS. sour cream works, but mexican crema is best. DO NOT substitute feta in this recipe. i am always baffled when recipes say you can use these cheeses interchangably. they crumble the same way, but they don't taste the same at all!

Ok, I just have to mix it up a bit here: Frozen biscuits? Are you kidding? People make biscuits from scratch precisely because they come together so quickly and are so tasty! Buying frozen biscuits is sort of like buying frozen toast! (Another phenomenon I'll never understand. The instructions for preparing pre-made toast that you buy in the freezer section of the grocery store: put into the toaster and, well, TOAST.) Biscuits are simple to make from scratch and I guarantee homemade biscuits will taste better. My husband, a native Kentuckian, says no true Southerner would make frozen biscuits, and serving them to guests would be just plain SHAMEFUL!

Sister Schubert's are amazing - I think the yeast rolls that come in a pan are better than the ones that come loose in a bag. I don't love the sausage as much as most people, but the cinnamon rolls are the best things EVER.

I've actually been to their headquarters in Luverne, Alabama - almost as exciting as it sounds, trust me - but they were not having tours that day. :(

Both Sister Schuberts and Marshalls are great products. As a matter of fact, Marshalls has been a staple here in Mobile, AL since at least the 1930's and are made practically in my back yard. Anyone who grew up here is familiar with them, and even the local school system has used Marshall's recipes for yeast rolls and biscuits since the 40's.

I think that dry spicy red peppers do it for me. One time I went into a pepper shop in Italy and was sampling the different products. Immediately after I was all over my boyfriend (at the time). Certainly increases circulation.

I can think of a handful off the top of my head: Pomegranate, bananas, celery (for females), peach (more for the vitamins & minerals than the shape), herbs -- basil, black pepper, cloves, ginger, cardamom...the list goes on.

I'm sure it says something about me, that this is the first time I am logging on to leave a comment! I belly laughed at the cherry stem postings...I entertained far too often in the pub of the restaurant my (ex) owned with my stem tying abilities. Two knots was my max! I have found that personally any food can be an aphrodisiac under the right circumstances....mood, your companion, atmosphere, ambiance, wine (have to stay away from the whiskey) or cocktails, just as long as I have been in on the cooking! It is the preparation that is sensual in my personal world.....
