I agree that scambled eggs with zucs are delicious.

Here's another idea if you're looking for something a little more satisfying, if you can afford a box of macaroni and cheese.

Scramble your eggs with herbs and oil and cut them into small bits. Finely chop the zucs and pan try them in oil. While this is going on, make the box of mac and cheese as your normally would (you don't need milk and butter, you can use oil and it will come out just fine). Combine everything into one dish and you can either eat it that way or bake it all together for 20-30 minutes on medium heat (maybe like 250 or 300).

If you don't want to buy processed tater tots, why don't you just buy some potatoes and make potato wedges with season salt on them? Super easy and tasty.

A cold potato salad would also be good, with something light and fresh like snap peas or something.

Eat for Eight Bucks: Spaghetti all'Aglio e Olio with Marinated Summer Vegetables

I sort of developed this recipe on my own at home by just messing around. I don't bake the tomatoes, but instead slice when into rounds (like for a sandwich) and toss them into the pan when I'm almost done cooking so that they're only in there for like 30 seconds to a minute. It's probably not as tasty as slow roasting but it gets the job done.

Mushrooms, onions, and bell pepper are also good with this.
