Cheft Teton taught me how to cook with coconut oil. This stuff is amazing. From cooking to smoothy drinks, you can use this on everything. I cook my rice with coconut oil. Its so delicous! What are your thoughts in cooking with coconut oil?
Saturated Fat: A Vital Ingredient for a Healthy Body: Over many decades coconut oil received bad publicity due to its saturated fat content, but research has shown that not all saturated fats are alike and coconut oil is unique in its structural make-up. It is not only the highest source of saturated fats (92%) but included in this is the highest source of saturated medium chain triglycerides (62%) of any naturally occurring vegan food source. Furthermore around 50% of these MCT’s are made up of lauric acid, the most important essential fatty acid in building and maintaining the body’s immune system.
Apart from coconut oil, the only other source of lauric acid found in such high concentrations is in mother’s milk. Tropical oils and mother’s milk are by far the richest food sources of medium chain fatty acids available. The closest other source of these vital building blocks for our immune system would be milk fat and butter, comprising around 3% of its content. Any other vegetable oil is completely deficient in these MCFAs.
Coconut oil can be use for whatever, In the mornings I make my husband scrambe eggs with a touch of coconut oil and he loves it. Not to mention he can be very picky. If you are dieting you definitly use coconut oil.
grandpa or grandma cooking Thanksgiving dinner, I go grandpa. He is awesome in the kitchen and the food taste excellent.
My husband grew up in Kerala, India and there almost everything is cooked in coconut oil. It doesn't taste that coconuty and it actually has a very good aftertaste that seems to enhance and support vegetables, fish and meat. Since the Keralites have been using & eating coconuts and its oil for generations, I'm sure it is okay. In terms of health, everything is good in moderation.

My knee-jerk reaction was more like ccbweb's comment than Potluckcraft's so I did a little googling.
Naturally, the sites that sell or grow coconuts discussed it as though it were Lourdes water; but there were also naysayers. I eventually found
a site that was somewhat balanced.
A point of confusion may be when it was discovered that hydrogenating was bad for health and one of the most frequently used hydrogenated oils was coconut oil - another was palm kernel oil. Coconuts and Hearts of Palm became poison in the eyes of many. This was the case until it was determined that it was the hydrogenating and not necessarily the oil causing problems.

Coconut oil is supposedly really healthy. I read all about it awhile ago but can't find the sources right now.
Unlike Potluckcraft, I found that it tasted less coconutty than expected.
It's a team effort in our apartment as well. My husband will do the apple cake the day before, and I'll do some of the apps. The day of, we'll do the stuffing and turkey together, then the sides (tho I'll probably do most of them while he cleans and sets the table). For the last minute prep, the gravy is his department, and I do the mashed potatoes.
Growing up, my mom did everything except carve. My, how far we've come. Still... I wouldn't dream of depriving the man of the house of carving duties.
It is a team effort this year in my household. I'm cooking the turkey and stuffing; my wife is doing the potatoes and green beans; my mother-in-law is doing the pies, cranberries and sweet potatoes; and my father-in-law is keeping my 21 month old son out of trouble.
