Serious Cheese: Nothing Says Autumn Like Grilled Cheese and Apples

I'm going to have to try a couple of your suggestions, sound so good. I've always made my grilled cheese with really old cheddar, thin apple slices, a bit of dijon and then ripped sage in the butter in the pan. Works for me.

I enjoy my apples dipped in beer-cheedar cheese fondue.
(Half cheddar, half gruyere for consistency's sake)
