Bread Baking: Jam Muffins
my mother made these a lot as a child, though like another commenter she hid the jam in the middle of the muffin rather than mixing it in. And she called them Surprise Muffins.

I've used this mold before, I think that they sell them at JB Prince. It actually looks like a cake rather than a mousse (I see cracks along the bottom). Should be fairly easy to replicate if you want the fantasy to become reality. Or you could just buy one. :)
