yea I don't know how my parents use their cleaver as an everyday chef's knife. I've tried it before, and I felt like I was going to chop my fingers off dicing onions.
Dinner Tonight: Chinese Steamed Trout With Fermented Black Beans
Chinese people usually serve it whole at the dining table, and then my mom would separate the flesh from the bones on one side, then carefully remove the skeleton (with as much bones attached as possible) because god forbid you flip the fish (it's bad luck according to Chinese people)!
