Meat Lite: Sweet Potato and Chicken Enchiladas with Chile Sauce
Made this tonight, and it was crazy tasty. I used a bit more chicken (maybe 3/4 pound) but it would have been just as good with less. Note that the recipe doesn't have you warm the tortillas in hot oil first, so when I rolled them they broke apart a bit and it became more of an enchilada casserole, but we didn't mind. The sweetness of the sweet potato was great.

Finally made these tonight. I love brussels sprouts, and this is now my all-time favorite preparation. Even better than roasting them with bacon! That sweetness from the balsamic vinegar is amazing.

Made this the other day - really great. One of those "wow, this tastes like I got it at a restaurant!" meals. It was quite a bit of work, though - deep frying the eggplant in batches took awhile.
