Anthony Bourdain's Paula Deen Diss

i don't care for Paula, Rachel, etc. but he's in no place to tell her paula sucks. they're just different and that's ok. i'd like for someone like Thomas Pychon or Michael Chabon to let Bourdain know that his writing sucks! No one can be Hunter S.Thompson which I think he strives to be with Kitchen Confidential.

Should Restaurants Allow Substitutions?

maybe its an LA thing but i can name off at least 3 restaurants (ammo, father's office and yours truly gjelina) with a strict no substitution policy. i certainly don't agree with it but is it a poplar policy with most restaurants in other cities. i know it certainly is here....and they seem to be very proud of it.

@granita- totally understand your frustration.

i think places like FO and Gjelina can make policies like "no we won't leave off the cheese or anything from your order even if you might die" b/c they do business like gangbusters and they don't need to cater to customers. i remember strategizing on how to get a seat with some co-workers at FO before going to the one in SM( back then the CC location didn't exist). it's crazy that we even had to create a game plan to get a seat. no sub is understandable but a kitchen not able to leave off food is simply arrogance making the rules. i think since we're so food challenged we sort of gave up. if they accommodate us great if not we just don't go there. we always call before hand to make sure they can substitute. but somehow i can't imagine gordon ramsey and victoria beckham calling before hand ;)

i bet you anything if people stopped going to these restaurants then we might see the rules bending a bit for these institutions.

i've been pregnant with gestation diabetes and have food allergies. my son has multiple food allergies and we can only eat out at a handful of places or otherwise risk his life. coming from this perspective i say you can't go into a restaurant that has a no modification policy and demand it. vickie wanted more than no dressing. if the dish doesn't suit you then you gotta pick something else or go somewhere else. period. maybe we've been thru the school of hard knocks with all of our food related issues but a restaurant is a private business and they can operate however they want. we've learned the hard way.

although i find the no sub/mod policy a bit uptight having worked in a restaurant i know subbing can really screw the flow. gjelina is a pretty popular restaurant here. sounds like most people here haven't been to father's office either. talk about no substitutions!

Wheat-free, dairy-free, egg-free meal ideas please

rice stir fry. i always use day old rice. start with oil (i use olive) and fry up some onion. then i add in whatever i have in the fridge. sometimes it's sausage, spinach, and zucchini. once browned add in the rice and some tamari and a dash of mirin. you can use whatever meat/vegetable combo you have on hand.

Mixed Review: Cherrybrook Kitchen's Gluten-Free Chocolate Chip Cookies

King Arthurs Flour makes a gluten free cookie mix that's exactly what you guys are looking for. It's a brown sugar base mix and you just add in your preferred fat- butter or margarine and whatever add ins you choose. it makes a wonderful cookie but i found that i need to add in vanilla to give it that extra something. i've tried a lot of gluten free cookie mixes and the chips are where they all fail.

dijon mustard. blah! perhaps i haven't had good dijon but too spicy in the nose. love brown mustard and some yellow. don't get me wrong, i love spicy foods like curries and all hot sauces but something about dijon doesn't do it for me. however, i enjoy dijon mixed into vinaigrette or other sauces...

Is your kid good in a restaurant?

my son who is almost 2 does pretty well. but i come armed with crayons, a book, a snack, and some toy cars. we always eat early and never go to a white table cloth type of place. we go to ramen or the any place with a kids menu even though he ends up eating off the adult menu. he's more of a grilled sea bass guy and not so much of a chicken nuggets and burger person. i feel that eventually we'll go to a white table cloth type of place so i'm not in a rush. beside those are the places i rather enjoy with my husband alone.

anyway, a few days ago he was really tired but we went out to ramen. when we first sat down he started to sort of act out but then a few minutes later a family of 4 sat right next to us with a son around his age and a girl about 4 or 5. they were quite loud and all over the place. the mom kept trying to quiet them down but the more she tried the more they rebelled.

immediately my little mouse started to act all mature and quieted down. it was quite impressive but also very interesting to see how he reacted to the situation!

Top Chef Contestants - Least Favorite

forgot about kelly too. she seems like a spoiled little brat. the difference between someone like angelo and spike or hung is that the latter two never grossed me out they were jerks but didn't have too much going in the creep factor. this season, they really picked some creepy people for the show.

Angelo and Angelo. Spike, Marcel, Amanda and Hosea and the girl Hosea was getting it on with (blocked her name out) bothered me but not in the same way Angelo bothers me. He's gross and annoying and frankly difficult on the eyes b/c he says silly things. that guy who supposedly stole the pea puree (i blocked his name out too) bothered me as well. Hung was annoying but had the skills to back it up. Voltaggio (the one that one) was super cocky but also had the chops to back it up. Angelo seems makes overly sweet Asian food that caters to a PF changs crowd. Please go home next episode. thanks.

a Trader Joe's Disappointment

i live in pasadena the home of trader joe's. i shop there at least once a week and get some of the following as needed; frozen fruits, rice milk, raw almond butter ($5.99?), pot stickers, mustard, coffee, coffee filters, wine, nuts, crackers. chocolate. it's not supposed to be a wow type of store, really. it's really just another grocery store with pretty decent prices. i can't recall getting raw almond butter for $6 anywhere else. I've been shopping at TJ' since college yrs in the 90's and it's always been a reliable store (if they decided to stop discontinuing loved items)

anyway, getting to my point, i went to a trader joe's in scarsdale, NY near my mom's old house when i was visiting her. i expected the same experience i have in my 4 trader joes here in pasadena and sadly, i was really disappointed. i don't know why. it just didn't vibe the same and the items were definitely different. so perhaps it's a regional thing mixed with an overhype?

Hiding and Sneaking Vegetables with Children

i agree with you in theory. in my mind i had visions of me and my son eating chopped up broccoli and loving each minute. well, that was a clearly just a dream. not sure if you have kids or not but just getting my 18 month old to eat can be a battle in itself. i get hiding vegetables now. i'm lucky b/c he loves fruit and know many toddlers who won't eat it. i plan to teach my little guy about the beauty of veggies when he can understand a little more and hope for the best. my husband eats about 50% raw so he eats fruit and veggies all day. we try to set good examples of eating and hope that one day he'll embrace it. until then i'll be shredding zucchini and carrots into his stews.

Fancy Restaurants Should Implement an Early 'Baby Seating'

to zack and izzy's mama,

it's the mommy and me movie concept that people don't understand until you have a baby. also to add, when our little guy was 3 months old he was very picky and would only allow my sister to babysit. once we tried a regular babysitter we ended up coming home b/c he was crying the whole time. now that he's 6 months old he's worse when left with others b/c he is so much more aware. of course this dining out experience depends on the child and how much s/he can handle. but as a person who values food and the experience of dining i would like to share this my little guy. we're not talking prefix meals @french laundry but the neighborhood restaurants where we can push the stroller to.

This is such a good idea and I was just mentioning this idea to another mom. Those against this idea don't get it because they don't have babies. The family night would start early and it's not meant to be for single people or couples without babies. I say babies b/c until they become full fledged toddlers or kids it's whole different ball game.
