How Do You Grill Your Cheese?
My grilled cheese is simple white or wheat bread with gruyere and white cheddar cheese. The key that seperates mine from the rest is I melt a stick of butter and half the amount of vegetable oil mixed together and brush it on liberally. Then reduce some balsamic vinegar and drizzle the sandwhich with that and serve it with an apple sauce to dip it in.
fava bean help
The only way I have eaten them is the fava bean puree that we made at a restaurant I worked at. Cook the fava beans until tender then garlic, lemon, and some olive oil and puree it up and serve on a mezze platter with some flatbread. Absolutley addictive!!!!!!
Worst Sandwich You've Ever Had
I completely disagree other than possibly a butter sandwich or mustard sandwich. Anything that is "sandwiched" between two objects is the greatest possible invention in the culinary world.

Let's talk knives
I will say this like vehicals buy American made!!! I love dexter russell, and Lampson Sharp both located in Western Massachusetts. They are similar to german knives (henkel, and Wostof) but its always nice as someone who lives in Massachusetts to buy local.

The Stuffalo: A Buffalo-Chicken-Stuffed -Crust Pizza
Im with apizzagirl this is just the beginning of endless possibilities. What about chicken cordon bleu pizza. chicken stuffed crust with a ham, and shredded swiss or possibily gureyer.
Cook the Book: Ham, Brie, and Apple French Toast Panini
it sounds quite delicious, and worth every calorie. Pears might be nice replacement for the apples also.
Cheeseburger in a Can?
oh great now mc d's is going to have a new product to make a buck on.
How Do You Nacho?

Worst Sandwich You've Ever Had
I dont understand what's so wrong with white bread and mayo?? No one likes a turkey or ham sandwhich with lettuce, cheese, mayo, mustard and tomatoe?? Weird. I guess I'm the odd man out. I also really like Tuna sandwiches on white bread-maybe because my dad never let us eat white bread growing up...
Anyways my worst sandwich ever growing up was a PB&J with butter on the jelly side!!! I gaged everytime I took a bite to find a layer of butter in there as well UGH! And I'd have to agree with the bologna on white w/mayo-NASTY!! What is bologna anyways?? Like animal parts all ground into one little round circle lol?

All of the mentions of raspberry or other types of jam made me think of my favorite type of grilled cheese sandwich on steroids... the Monte Christo.
I have never made one as good as the ones served to me by a waiter, and the best I have had were served in Las Vegas.
At home, it's sharp cheddar, sour dough, butter on the outside and mayo & mustard on the inside. Nothing to it!
How Do You Grill Your Cheese?
I love using a few different types of cheeses...and grating them...and mixing them throughout the sandwich - like a gruyere, a cheddar, and a grana padano.
Where did i learn the grating trick? From the "chefs" at one of the finest purveyors of grilled cheese west of the Mississippi - Norm's Diner in Los Angeles. (But, trust me, they are not using gruyere, cheddar, and grana)
Mmmmmmmm.
How Do You Grill Your Cheese?
I make grilled cheese as my father taught me - on a waffle iron. Not the kind used for Belgium waffles but an old time waffle iron.
Supermarket white or whole wheat bread, though sometimes I use Philadelphia's Metroplitan Bakery's whole grain bread. A healthy smear of soft and real butter on the sides meeting the grill.
Sliceable aged cheddar cheese - cut thick - enough to cover one piece of bread.
Optional, but should be mandatory - in-season tomatoes, the ones that still taste like tomatoes, and leftover baked ham. There should always be leftover baked ham in the fridge.
Fold the sandwich together, buttered sides out, and place on the heated waffle iron. Close the top and be patient. The sandwich is done when the bread is buttery crisp and the cheese starts melting onto the waffle iron's crevices.
Serve with waffle iron chese scrapings on the side. Those obsessed with such things, and I seem to be, will appreciate the grid network on the sandwich which promotes an orderly section by section and row by row consumption.

A simple grilled cheese would be some nice whole what "pain de mie" from Iggy's and a good old as you can get canadian cheddar with a sprinkle of oregano on top and then toasted in the toaster oven.
Ihsan Gurdal of Formaggio just let on a great grilled cheese secret (literally) at the Nantucket Wine Festival. You take a parmesan rind with a little cheese still on it. Rub it with olive oil an then put it on the grill rind side down. The cheese melts and bubbles and is a perfect treat at the end of a barbecue.

@joylissa - mayo as the "outer" butter or "inner" butter...or both?
I'M INTREGUED!
fava bean help
OH! of course! the liver is what made it so bitter! i forgot to trim it!
fava bean help
You didnt serve them with a man's liver and a nice bottle of chianti...LOL
fava bean help
got them out of pods and then peeled the skins away from the beans. still bitter. it must have been a bad batch.
fava bean help
By "peeling" them did you just mean taking them out of the pods?
Fava beans have pods and shells; if the favas are young you only need to take them out of the pod, if favas are older & large they my also have to have the shells removed to get rid of the bitter taste (kind of alot of work).
Oh, by the way you can cook them in the pods, in the shells or totally peeled....
fava bean help
I puree the fresh ones (pinch of nutmeg, butter, splash of cream) and serve in small portions with something roasted. Problem is, you have to either peel them before pureeing in a processor, or use a food mill, because the skins will not puree, they just end up as little unpleasant bits determined to lodge in your throat.
In the middle East, the dried beans are cooked and pureed, not unlike hummus. I believe this is Egypt's most often consumed dish- Fal Mudamas, or somegthing along those lines.
Worst Sandwich You've Ever Had
My sandwich was one I paid for at a sandwich shop. The idea sounds good but the exicution was all wrong.
Turkey (like left over thanksgiving turkey) with cornbread stuffing and carnberry mayo. Maybe it tasted so bad because it wasn't my thanksgiving left overs it was some want to be thanksgiving dinner that never made it to the table.
Worst Sandwich You've Ever Had
i recall some incident with trying to make a sandwich with processed american cheese slices, mustard and i think... potato\ chips or something? i made this on one of the rare occasions i was babysat claiming "my mom lets me make this all the time" i know i ate too many cheese slices that night and then threw them up.
i kinda still make the same kind of food mistakes.
Worst Sandwich You've Ever Had
when i was young i remember eating butter and mayo sandwiches on white bread with my cousin. he was about 5 at the time (and vegetarian, by his parents choice) so that was basically all he would eat for lunch. sometimes there was some cucumber (for all the added flavor, ya know?). ha. it was freaking gross and i don't know why my parents made me eat it. luckily he lived far away and didn't come over for lunch often.
Worst Sandwich You've Ever Had
Bologna on white bread with ketchup. The ketchup made everything so soggy. When I was little, I loved eating it since it kind of tasted like a hot dog. Now the thought of it makes me ill...
Worst Sandwich You've Ever Had
This has always been pretty obvious to me, but my parents made the best sandwiches for me. We always had whole grain bread, none of that gross white bread, deli mustards (even though I didn't like mustard as a kid), fresh deli meat (or leftover turkey, ham, steak, etc.), fresh veggies. Mmmm, makes me want a sandwich right now!
I think my parents spoiled me, food-wise, from a pretty early age.
Worst Sandwich You've Ever Had
YES I am totally with the Miracle Whip Haters. I think I hate it because it has that slightly sweet flavor. If I wanted sweet, I'd have PB&J. I guess I always associate mayo with more savory flavors and the sweetness of Miracle Whip makes my taste buds confused and upset.
Worst Sandwich You've Ever Had
Nothing is worse than an egg salad sandwich...
...that includes egg shells....*blech!*
Worst Sandwich You've Ever Had
The worst ever? White bread, glops of mayo, raw white onion, parsley. Someone made this for my husband and me right after we got married. She wouldn't tell me what was in it, just that it was a surprise and I would love it. I'm amazed that I was able to get it back out of my mouth without incident, and by incident I mean the almost instantaneous upchucking that usually occurs when I accidentally bite into raw onion. It was HIDEOUS! But at least she used Hellman's ;)
Worst Sandwich You've Ever Had
@twoojoe ha, no, all legal items in that garden! i remember it being inside on this giant 45 degree slope, all water trickle'n down all the time... hmm.
Worst Sandwich You've Ever Had
Most of mine deal with tuna. I think the official worst sandwich I ever had was a tuna salad hoagie from Wawa. I have no idea how people eat their tuna, but it is SO heavily mayonnaised it just oozes out of the sandwich. Blech. I can feel my arteries clogging just thinking about that day.
I also made the mistake once of packing a tuna salad sandwich (made at home with a normal tuna:mayo ratio) to eat several hours later at lunch. I don't think it would've been hazardous to my health to eat the sandwich, but it definitely felt like the salad had taken a turn for the worse over the course of that time. Apparently it wasn't kept cold enough.
One last one...my family had a constant war going as to how to make tuna salad. My mom and I agreed that it should be tuna, mayo, celery, and onions, my dad wanted his with relish (*shudder*). So one day at lunch, my mom offered me tuna salad, i bit in expecting my normal sandwich, and got my dad's sandwich instead. Horrible surprise.
Worst Sandwich You've Ever Had
I once dated someone who made me a Chef Boyardee mini ravioli sandwich on buttered white bread, and then as if the "sauce" from the canned ravioli wasn't enough he added ketchup. It was so soggy he had to serve it in a bowl with a knife and fork.
Worst Sandwich You've Ever Had
Bologna, Kraft Singles and Miracle Whip on fat white bread. Blech!!
Also, I don't like butter on cold sandwiches, so... some kind of mystery pre-wrapped deli style meat like olive loaf with buttered bread. The horror....
Actually, most of those weird, funny smelling deli-style meats on anything are gross.
Worst Sandwich You've Ever Had
My sister used to eat peanut butter and bologna sandwich. The smell was nauseating!
