The Crisper Whisperer: Andrew Carmellini's Cauliflower

i first used this recipe a few years ago when it came out in the finecooking thanksgiving issue, in fact, i made it that very thanksgiving holiday. it is a truly wonderful medley of textures and flavours. this is a perfect winter dish, hearty- without being obscenely heavy.

we made it for the holiday and we had leftovers. if you have leftovers you'd like to eat, i would recommend bringing this to room temp like a veg salad and def not reheating it in the microwave or stovetop. the pears just cant be reheated, it makes the dish quite unpleasant.

as we all know, sriracha really goes on anything. my favourite thing? adding it to tartar sauce for seafood. its like.... perfect.

What to do with chestnuts?

i had the most delicious dish of chestnuts, stewed, with what tasted like cinnamon and nutmeg, very creamy, and topped with ricotta salata. absolutely delicate and wintry and divine.

themangolassie, thanks for clearing that up. i was wondering about this, upon my viewing of the first top chef episode. but indeed, upon doublechecking this with a chowhound search and some extensive reading. it is the general consensus that the original uno's location is pretty highly regarded as both tasty and classic in the typical foodie chicagoan opinion. i'm glad to understand this now.
