I go through phases--I used to make pasta with garlicky vegetables and top it with an olive-oil fried egg, but lately I've been going more the "picnic" route and eating lots of little snacks. I've also started canning, which means I always have homemade kim chi or pickles to make a meal out of when I don't feel like turning on the stove.

It's not hugely innovative, but I'm a big fan of ceviche, homemade tortilla chips, refried beans, and salsa and guac. Emphasis on the ceviche. The oven doesn't need to be turned on for any part of it, and everything, even the beans, can feel light and yummy.
