I agree, I usually go there for brunch only.
Oddly enough, Cafe Benelux (which is owned by the same people as Hollander) has one of my favorite burgers (the sprocket). And they have nailed/came close to requested temp every time I have ordered it.

I definitely wouldn't say they are "mediocre." Centraal and Hollander have never failed me brunch-wise. Plus they have the best breakfast sausage.
In terms of lunch/dinner items they are less impressive but imo calling them mediocre is a bit overkill.

I don't know what it is but I can only think of 2-3 places off the top of my head which have served my burger at the requested temp in Milwaukee. If you're going to serve me a medium-well burger, don't ask me how I want it cooked. It's getting really annoying.

@Kuban: I'm craving a couple of those right now! Pick n Save has OK ham but I've found the ham at other locations (most southside bakeries/Glorioso's) is more spiced, where you get a few stray cloves in the package. Sooo good.

The thing I associate most with hard rolls is getting hot ham and rolls from Milwaukee bakeries as a kid. Not that you can't eat them with other foods, it's that usually a lot of these Polish/Italian bakeries throw in 6 free rolls when you buy a pound of ham.

@ Lacey: Another good review, I agree with pretty much everything you've said. Sometimes I really crave some Culver's. Their curds definitely don't compare to the ones you get at the State Fair but are better than some I've had from restaurants/bars.
If you've never had it, I just had a killer burger at Honey Pie in Bay View the other day. Wasn't expecting much (I mostly go for the entrees when I'm there) but it really hit the spot.

Umama: those are clearly "wheat buns" as in wheat bread. Not wheat flour, but dark wheat bread. Everyone knows where standard baking flour comes from.

@ Lacey: I wouldn't hold out on the fluke thing. I think the staff is just poorly trained.
First trip: super hard buns, beef was OK, good amount of fries/cheese curds. Wasn't blown away but wanted to give them another try.
Second trip: delicious burgers, super juicy, soft bun. But barely any fries in either my or my girlfriend's order. Literally seemed like half the amount I was given the first time.
Third trip: everything was good, although maybe it's because I like the char flavor (I didn't find it overwhelming when I visited). But the bun was slightly stale, definitely not as bad as the first time (I'm talking when you take a bakery fresh roll and wait a couple days to eat it hard) but still not as good as it should have been.
I haven't been back this season. I don't like places that are horribly inconsistent (my problems with The Eatery on Farwell and Trocadero are prime examples of that) so I'm weary of returning.

Kudos to Patra's for trying to make a "healthy burger."
In all honesty, however, I don't get the "let's make restaurant food (obviously burgers in this case) healthier as a whole" idea. If people would be more cognizant of their sedentary lifestyles and what they put into their bodies on a daily basis this wouldn't even be on TV. Take Masterchef, for instance. Bastianich used to be quite hefty. He started running a lot and now, because of his active lifestyle, admits to not have to worry about what he eats because of the changes to his amount of exercise. Ramsay is fit as well, as it is well-known he exercises a lot as well. Elliot...not so much.
I'm all for Oliver's goal to change school lunches because that helps children learn at an early age the negative effects excess sugar/fat/carbohydrates has on a person. I just wish this shows would focus on the broad spectrum rather than a specific item one could eat. Yes, a healthier burger is, well, healthier. But when people fail to realize that food is a FUEL to make your body run and not just something you shove in your mouth because it looks delicious...well, I guess I just don't think something like this will change anything because it's not altering people's perception on their life choices as a whole. It's just, "Hey, we ate healthy 450 calorie burgers. Time for some ice cream!"

As a lover of egg yolks (Eggs Benedict is in my top three meals), I wonder if they will ever be used more widely as a sauce. Not "in" a sauce (i.e. hollandaise/mayo) but warm egg yolk drizzled over, say, a delicious cured meat and bitter greens pizza.
Call me gross, but I find straight ketchup nasty and it's one of the most popular condiments so whatever!
How to Make Grilled Patty Melts
If non-griddled bread makes this not a patty-melt, I shudder to think what pizza purists would call anything not cooked in an artisan brick oven.
