Kenji - I'm planning on an herb butter rub under the skin for the bird, and started thinking I should add salt to the recipe. Now I'm thinking that may be a bad idea. I should preface this by saying I went lazy this year and purchased a bird that was already brined. Thoughts on whether salting the meat directly before roasting is bad?
