Hey, I'm in the same boat!
I'm going to (and this isn't exact yet - see whats in the cupboard): fry off some spring onion, red chilli and garlic, then the pork and add some brown sugar, ginger anfd fish sauce. Then finish with a little coconut milk and a good handful of corriander - then straight on to some white rice!
