Festival Food in Australia: Dagwood Dogs

You can order these things in almost all New Zealand fish and chip shops (which are everywhere). But here they are just called a battered sausage (or sometimes a savaloy). They use the same batter they use for the fish, which is just a very simple white flour batter. Totally delicious but I don't tend to order them anymore much as they are not that good for you unless you really need a quick injection of fat in your diet :)

Cool to see a plug for NZ wines. I live in Christchurch NZ and we have a lot of very good wineries within an hour of the city. Personally though my favorite NZ wines are Central Otago Pinots and Mt Difficulty Pinot always blows my mind: http://www.mtdifficulty.co.nz/

There is so much Sav Blanc down here in NZ its ridiculous. The Savs are quite cheap so you can drink incredibly well for $10-$20NZD a bottle.

Heston Blumenthal for sure! If you have ever seen any of the Hestons feast shows you would know what I mean - that dude would throw you a party and give you a dining experience like you have never seen or tasted!

I've wondered about the foil next to the food acidity thing and now I just use foil with parchment inside the foil. That way you get the ease of sealing with the foil but the parchment is next to the food. I also like to put the fish on lemon slices so its super easy to de-package the food onto the plate.

Never mind serving that vege that the chicken sits on during roasting - drain out all the fat, mash up the vege, add some flour and stock and make a fantastic chicken gravy.

Do You Have a Sunday Night Cooking Tradition?

I sort-of cooked last night. I made some pizza dough which is going to be used Monday night after I get home from a hard day at work so Sunday night cooking was more prep to make my life easy on the Monday night. So Sunday night dinner was fish and chips which are available everywhere in NZ and pretty good too.

I'm going to make this for my girlfriend tomorrow night. I'll fill it with a little raspberry coulis and chocolate brownie. I might put a little scoop of chocolate ice cream in there as well. Shes gonna love it.

Putting a fried egg on a burger is a pretty typical thing to do in New Zealand. In fact the typical "kiwi-burger" always has a fried egg and beetroot. I find that avocado goes quite nicely with a chicken burger. Otherwise they were totally awesome.
