Weekend Giveaway: 'United Cakes of America'

Growing up near Lancaster County, Pennsylvania (home to a large Amish population) warm apple dumplings are one of my favorite regional desserts. An entire apple mixed with brown sugar and cinnamon then wrapped in flaky pie dough bake and backed in the oven turns into a wonderful consistency. The sauce is syrupy, the crust flakes away, and inside the apple gives just enough to your fork or spoon. Truly a wonderful dessert.

You do have to be careful that your eggs aren't too cold if you adding them next. When I took some baking course I was always told to bring eggs as close to room temperature as possible. Baking is chemistry after all.

-El Pollo Rico, the best Peruvian chicken joint
-Carl's Ice Cream is less than an hour south
-Any of the Thai restaurants in Old Town Fairfax
-The taco truck that pulls up the construction site next to my office

As a young(er) chef it hard to get too nostalgic about my own kitchen. I think of my parents and their cutting boards. There one in particular that stands out, well worn, almost the size of half sheet pan. It has been has been repaired at least a few times in my memory (Mom always told us not to let it soak in the sink...)

City Flavor Guide: Cincinnati

I love Cincinnati chili. In my opinion, no one does it better than Skyline; they are a model of perfect food service. Graeter's is pretty good, and yes their blackberry chocolate chip is as good as billed.
