i know what you mean about the verbal tip...we call that the LIP TIP. I will never understand, I have a guy just picking up a take-out order who tipped me 10 bucks but I had a duece with a bill around 90 bucks for lunch and I got a smile and a lip tip! arrrgh!
Outdated food attitudes
My father in law is famous for salting everything before he eats it, I just forgot to put out the salt last time he came for dinner, when he asked where the salt was ( before his plate was even in front of him) I advised him that I had already seasoned the food, and if he still needed some I would get it for him...He got the hint and the cycle is broken :)

YEAH, THAT IS THE TASTE, DELICIOUSLY BITTER! It is an aquired taste, I grew up eating it so I love it, but it did take my husband some getting used to ( he loves it now though).

Pennsylvania Dutch cuisine
oh yeah, also dont forget chicken croquetts, and lebanon bologna!
Pennsylvania Dutch cuisine
whoopie pies are a must, chicken pot pie (not in a crust, more like chicken and noodles) and stop at any chicken bbq stand on the side of the road, usually rt 30 is full of them, not really bbq, more just pit chicken, but sooo good. The central market is also a must!!
Who has the BEST cooking show on TV and why?
I am a fan of Nigella, even if she does make cooking look like porn. And i think I would leave my fiance for Tyler! Alton brown is singlehandedly responsible for making me the new "Queen of Gravy" in my family, the man is a genius but I fast forward thru a lot of the scientific parts, cooking in my house is a little less science and a little more whatever I have in the fridge tonight. Emeril turns me off, he wipes his nose WAY to much-gross.
what are you planning to eat for the fourth of july?
We are having the traditional bbq, Juicy burgers, hot dogs, fried chicken, lots of salads, fresh watermelon and icy cold beer and lemonade. I feel so retro :)
Seasoning an Iron Skillet . . . On the Grill?
i have cast iron grill grates and had to season THEM on the grill, came out great, 6 yrs and have to just oil it up pre-grilling. You can def season cast iron on a grill.
What's the Best Cheese for Cheeseburgers?
i am a big fan of muenster, melts pretty good and has a bit more flavor.
Margarita Mix
I just made margs last weekend, huge hit...I used the stirrings mix and added tequila and POM juice...oh god...soooo good.
What's the Best Cheese for Cheeseburgers?
It has to be French Doux de Montagne cheese. It says so here Pork cheeseburger with avocado :-)

^^Which means you're kind of a tool. Do you realize that the base wage for many servers is around $2.33 per hour?? What we take home in tips is what we earn. It's not like we're making 8 bucks an hour and your $10 is just an added bonus.
My Brocoli Rabe was bitter
We love its bitterness. Usually we serve it sauteed with olive oil, garlic, crushed red pepper flakes, a bit of water or chicken stock, salt, finish with a squeeze of fresh lemon. If you serve it along a rich pasta dish (carbonara or bolognese) its bitterness is a nice counterpoint.
Try making the orrechiette with italian sausage and broccoli rabe that an earlier commenter mentioned. It's one of those dishes where the ingredients just marry so well, it will likely make you a fan of rabe.
My Brocoli Rabe was bitter
Yes, it's bitter. I counteract/contrast the bitterness by sauteeing it with pine nuts. I first chop the rabe, then steam until tender. (You can also blanche/boil, but I find it gets too wet.) Then I saute some chopped pine nuts in olive oil. Just as some of them are beginning to brown, I add minced garlic. Let it go a few more minutes, then add the rabe, stir, and heat through.
My Brocoli Rabe was bitter
Brocolli rabe is one of my faves...(I find myself posting about this an awful lot!)
It is pretty bitter...one thing that I find helps is adding a bit of chicken stock and a dash of white wine...(along with the olive oil, garlic, red pepper flakes)...then serve over pasta with grated parm.
The stock may cut a bit of the bitterness, but really, it's a bitter green, so expect it to be a bit bitter.
My Brocoli Rabe was bitter
it is supposed to be bitter, so i guess if you don't like bitter veggies, you should stay away from it. my favorite way to have it is with orrechiette and italian sausage. mmmmm.
My Brocoli Rabe was bitter
This is all really helpful. Thanks!!
My Brocoli Rabe was bitter
I always do it in chicken or vegetable stock
My Brocoli Rabe was bitter
When I do blanch it (mostly I tend not to), I only do so for a minute, and then cook it down in a bowl of ice water to stop the cooking process. The longer it's boiled, the more bitter it becomes.
My Brocoli Rabe was bitter
The posters are correct...a bitter vegetable. Maybe not the one for you.
I love it on a bed of garlicky white beans.

DEFAULT MEALS =
1. Baked Salmon with Roasted Vegetables (like asparagus, leeks, onions & zucchini
2. Ground Lamb mixed with sauteed onions & baked eggplant
3. Spaghetti Squash mixed with sun-dried tomatoes, canned chicken, canned green beans, onions, zucchini
4. Bison sausage sauteed with onions, peppers & greens
....yea, that is about it! ha ha! When I am at home my father & I cook default meals like puttenesca, spatch-cock chicken, cioppino, clam sauce & tuna nicoise salads... which are a lot more interesting than my meals but oh well...

I intentionally do not tip on tax. This seems like common sense to me, like not tipping on the tip.
It's rare that a waiter or waiter earns the 20% of the menu price that I give them. Some actually deserve more, and I have given it to them. Some waitstaff have reason to be grateful I don't stiff them altogether. Still, the tip is regarded as an entitlement, and having earned it is almost beside the point. Not leaving a 20% tip edges into "not standing for the National Anthem" territory - only a scoundrel even contemplates doing it, and peer pressure is the tool of enforcement.

What should we get?" people inquire all the time.
"Help me out a little," I am forced to retort. Is this dinner, or a snack? What do you like? What do you want? We just met. I am no psychic.
Gosh, I can see how this can be annoying for you, but hang on a minute, if a waiter/waitress said that to me ie, copped an attitude, I would walk out.
The other day, I was in my local tapas bar and wondered if I should have a beer or wine, and the very helpful waiter suggested beer and also which beer to have that would go so well with what I had ordered. No attitude, just friendliness and a willingness to help me out. I left him a nice tip and recommended this place to all my friends. I would go there time and time again.

When are you restaurant staff-people going to stop saying "JUST one?" when someone who is dining sans companion(s) enters your establishments?
Why not just say "Merely only just one inadequately dining all by yourself, utterly alone?" and get it over with?
Do you ever ask "JUST two? of a couple? Why not? I mean, they're so much less SUBSTANTIAL than a group of ten.

I have friends who do the verbal tipping thing and I hate it.
In general I hate eating with other people. One of my oldest friends is a "you don't tip on the sales tax" guy. I'll never understand that ... like tipping an extra 20% of 7% is going to kill you? That's less than 1.5% the cost of the meal! It makes me want to strangle him.

"Like my schlong"- who the hell says this to a total stranger in a public setting? Was he a 16 year old masquerading as an adult? I certainly hope his date (let's pray she didn't already marry the jackass) saw the light and ditched him. Guys like that make my skin crawl.
I love reading your posts. Since I don't have the intestinal fortitude (or patience) to be a server I live vicariously through you.

The junk food binge continues. I've already decided that instead of the artichoke ravioli I have in the fridge, I'm going to have canned soup, and maybe doritos with cream cheese (got this idea from a different thread here) for dinner.

@ wookie - My confession: i binged on junk food last weekend too!
(so not like me)
Shoppers had a sale on a giant bag of mini-peanut butter cups. They only lasted one night. Then I had some Doritos, a bag of pistachios and a BK Whopper...I feel sooooo guilty. I'll be making up for this for the next month :p
I think I've decided that it was worth it anyway :)
It's happening. Running out of things to cook!
if we're confessing food sins...well, here goes...my husband and I just went through our junkfood binge this past weekend...Costco polish sausages with a side of Costco pizza washed down with two Cokes and all the samples we could eat (there were some good samples at Costco that day)...then for dinner we ignored the lovely beef burgundy (that had simmered in the Crock Pot all day while we ran errands) and instead went to a local bar to watch football, drink beer and eat buffalo wings...the carnage continued the next morning, we went to a local diner and ate a skillet of eggs and sausage and potato all covered in some while gravy. ***burp***
@terabithia--if junk food is what you want, have it, and get over it. If you're a good eater the rest of the time, one bag of tostitos and a jar of nacho cheese isn't such a big deal. Now, if this becomes a weekly habit...well, then you'd better let us know, so's we can stage the intervention. ;)

vegetable soup or stir-fry

I like making a quick tomato sauce: a couple of tablespoons of olive oil, grate in a couple of cloves of garlic, saute them until they're cooked but not brown, add in a 28 oz. can of tomatoes (however you want them, I get a can of whole tomatoes and pulverize them until smooth). Add as much crushed red pepper flakes to taste and salt as well.
If you want it to be healthier, take a couple of carrots and zuchinni and shave them with a vegetable peeler and add that to whole wheat fettucine in the last minute of cooking. Add all of that to the tomato sauce and don't forget fresh grated parm.!

I hope this doesnt last long. Its going to hurt my wallet and my stomach!
