The Food Lab: Is Good Pizza Really All About the Water?
Thank you. Thank you, thank you, thank you. This means I don't have to be the one to make a ton of pies to disprove to a few friends of mine that water, as long as it isn't just plain awful, has a virtually no effect on the end result.
Now, can you do the same experiment with brewing beer? I am of the camp that adding minerals to your brew water to try and mimic a certain water from a certain area has zero effect on the flavor of the end product (though it may change the manner in which the brewer mentally tackles that brew).

Considering the amount of passion this sandwich evokes, it's probably a good thing I made a Reuben instead of, say, a pizza :)
