I did this last night and it was awesome. My butcher thought I was crazy adding oxtail, but it makes so much sense. There was such a great depth to the flavors. I can't wait to do this again.

@rondertaker: you really need a filet knife to get in there to remove the meat and fat. It makes it like a thousand times easier. Also, make sure that knife is good and sharp.
