Gluten-Free Tuesday: Teff

I wonder if there's a totally gluten-free recipe for injera out there? There are a few Ethiopian restaurants in my area, but after inquiring at a African grocery about injera, the clerk there assured me that most of those restaurants will use wheat flour as well. Would love to try it at home! Until then, there's teff banana bread! Thanks so much Shauna!

Ed Levine's Serious Diet, Week 82: Peanut Butter Portion Control

Mmmm peanut butter and bacon. Heaven.

I'm a huge peanut butter fan but I can generally control myself beyond 2-3 Tablespoons. I buy natural nowadays, so at least no HFCS. But honestly, the fat in the PB satiates me, I guess. Sugary things such as cookies, however? I have a tough time controlling myself eating those. Congrats on the weight loss!

Grilling: Mexican Roadside Chicken with Green Onions

Ahh, I too love my Mexican Everyday book. In fact, making Smoky Pork Tinga Tacos tonight! Can't wait to get home to the smell of deliciousness in the slow cooker. This chicken looks absolutely amazing. That's it - making this definitely next week!

You truly do get what you pay for

Cheese. Unfortunately, there are two versions of cheese in the house. The cheap stuff (my hubby prefers) and the "good" stuff (I prefer). The only one we agree on is the parmesan.
Veggies - I go out of my way to get fresh produce from the farmers market. So much better that way.
Steaks - I will scrimp, to a degree, on certain cuts of meat. But steak? Has to be grass-fed, free range, organic. YUM.
Eggs - I just can't go back to grocery store eggs, not even the best the store has to offer. I get mine from a local farm that raises happy chickens.

Betty Crocker gluten-free mix?

I have tried the brownies. Not too bad! They have nice chewy edges, which I love, and just enough fudginess in the middle. Don't taste gluten-free!

I have the yellow cake mix and the chocolate chip cookie mix at home, haven't made yet. I've heard good things about them though!

Cook the Book: 'What We Eat When We Eat Alone'

Random combinations, such as a spoonful of peanut butter, then a corn tortilla with melted cheese in the middle (a psuedo-quesadilla). A piece of fruit. A yogurt.

If I'm actually preparing myself a meal, the sky's the limit. I will definitely make something I would enjoy but my husband would not...i.e. a vegetable frittata, eggplant, something with lots of tomatoes.

Serious Heat: Kogi-Inspired Bulgogi Tacos with Spicy Slaw

I like the idea of substituting ground beef...it would cut down the marinade time and be nice and tender. I made a version of the Kogi beef tacos a while back and blogged about it too! Inca Coke or Mexican Coke: Have you seen it?

Yes, Mexican coke (along with a lot of other bottled Mexican sodas) is made with cane sugar. Tastes much much better. Find it at any Latino grocery!

Favorite frozen entrees?

I don't buy a lot of frozen stuff...so much sodium in there and most tastes like crap. However, Stouffer's mac n cheese, lasagna, and stuffed bell peppers are pretty tasty. My hubby loves Totinos frozen pizzas. Also, there are some frozen italian meals I buy on occasion - Michaelos, maybe? Can't remember the name. They make a veggie lasagna that's not too bad.

Blue Bell is definitely the best! And the best for the money - a lot less expensive (at least it is in Texas, I know you can't get it everywhere) than Haagen Daaz and Ben & Jerry.

Dinner Tonight: Fried Egg Sandwich

Breakfast for dinner is always right!

I'm with senorjames. I just made one of these by tossing the prosciutto in the pan then cracking the egg on top of it. I prefer "over medium" eggs with that hot yellow jelly oozing out rather than a runny yolk all over the plate.

I finally tried the PB & Co. Maple and it is delish, very sweet! Peanut and honey almond butters are just wonderful. I can eat it on anything- waffles, ice cream, Oreos, Nilla wafers, bread of course, etc etc. I really really want to try the P.B. Loco brand. If only it was sold in CA....
