Weekend Book Giveaway: 'Extreme Cuisine'

Nothing too extreme - calf fries, head taco, grasshoppers. The usual.
I have limits, however; I've swore off McDonald's twenty years ago.

Win a Free Organic D'Artagnan Turkey

We smoke a turkey every year. That looks like a good brine to try. I prefer orange wood, however.

Critic-Turned-Cook Finds Critical Eating Habit Hard to Break

Two bad experiences will put me off a restaurant forever. In some cases it only takes one. Generally those that get one shot lose because what they tout as one of their signature dishes is a complete bomb. I figure if they can't at least rise to mediocre on what they do best then the rest must be truly abysmal.

Dinner Tonight: Patty Melt

I'm beginning to think that America is losing its sandwich heritage. Often as not, when I see a patty melt on a menu it includes American cheese by default. It was a major shock when I was first served that monstrosity. It may be a fine hamburger with a twist on the bread. It is not a patty melt. Any eatery that has to be asked to substitute Swiss for American cheese will end up serving an inferior product. You are better off going with a straight hamburger or having a salad.

A simple Italian sausage with lots of fennel. Grilled.

Do You Have a Favorite Frozen Apple Pie?

Sorry, if I were reduced eating a frozen pie I just skip the aggravation and go straight to Hostess. It's cheaper and has few leftovers to throw away. Honestly, pie is not that hard to do right.

Cook the Book: Pumpkin Baking

Pumpkin pie.
Much more and the other ingredients interfere with the pumpkin. For a while I thought that pumpkin custard sans crust would be even better but the crust is needed to soak up extra moisture.

Weekend Book Giveaway: 'Cake Wrecks'

Simple list:
Left out half the sugar in brownies = flat, dry, hard
Forgot to grease cake pan = half a cake stuck to pan
etc.
etc.
etc.

Cook the Book: 'Gourmet Today'

Paperback Joy of Cooking given me when I first left home. Only later did I figure out that it was one volume of a two volume set.

Cook the Book: 'Big Bob Gibson's BBQ Book'

The most incredible food I've eaten off of a smoker was at an International Barbecue Championship in San Diego several years ago. Baked Alaska inside a hollow pineapple and cooked on a barbecue is just an example. I've had some mighty good commercial bbq in Texas and Tennessee. Day to day I make do with what I can fix at home.

Cook the Book: 'Bite-Size Desserts'

Fried pies, deviled eggs, devils food cupcakes w/o icing, dove chocolate bites, and on and on and on. I'm not a good enough liar to choose one.

Healthy & Delicious: Avocado and Corn Salsa

Do vegan assume those who eat meat products don't like vegetables? I would say that's an extreme level of projection. Even potato chips could be considered vegan as could wonder bread so a good tasting vegetable based dish is not that unique or, necessarily, even healthy; and no one should be surprised that a meat eater might like them. Or not.

Cook the Book: '660 Curries' by Raghavan Iyer

My first experiences were as a child when my mother would prepare curry for a meal. Fairly bold for Montana and too long ago to remember accurately. She had been exposed to curry while teaching school in London in about 1950.

Cook the Book: 'Simple Fresh Southern'

My nannie always made a casserole of asparagus, green peas, mushroom gravy and cream cheese and loads of cheddar on top. Though I wouldn't eat this any other day of the year, it just isn't Thanksgiving without it.
