Butchering A Whole Lamb, By Slow Foods NYC
I am with LiveToEat on this one. Not all serious eaters come here to see dead animals, there are the random veggie foodies ya know. I hopped on while I was eating my lunch. This has happened a few times in the last few weeks, won't make that mistake again.
Help for a picky vegetarian?!
For a minute there I thought we might get through this post without someone feeling the need to tell the vegetarian to get over it and eat meat already, but no. Apparently that is just impossible. Yes you can be a foodie and a veg, as far as I recall vegetables (and other non meant foods) are foods too.
It seems to me TheresaB that you could expand your horizons by learning what spicy spices you don't like and omit or greatly reduce them. A lot of the stuff I make is Mexican influenced, lots of corn, black beans, tomatoes etc, but to make them less spicy, I just would decrease the amount of chilies, and then stuff all that in a bell pepper and bake, cheese optional.
Omitting Soda Pop
I cured my pretty gross diet coke addiction with club soda and lime. I work in a restaurant so it is readily available. When I's crave the diet coke "burn" I swig a taste from a portion cup.
Now pretty much all I drink is club soda. With lime, vodka, or whiskey. I think my palate is better for it...

The Joys of Unnaturally Flavored Sodas
I wish they'd make Fresca minus the aspertame. That stuff is suspect to me... Read a book which included info on all the FDA hearings about it, and suspiciously, researchers who found that aspertame could be unhealthy (cancer, I think) were than hired on by the people that produce aspertame. Anyone else hear about this?
'Top Chef Masters,' Episode 2: The 'Lost' Dinner
Although, I did like the cookie thing....
'Top Chef Masters,' Episode 2: The 'Lost' Dinner
I agree with pksmash. None were amuses for the quickfire, especially the winner who made frito shallot rings. She would have been berated for that on real TC .Also were there shallots in that vending machine?? I think not. Everyone else used more than 1 vending machine ingredient. (Not counting the obviously obligatory dr pepper ingredient.)
Just not in love with the TC Masters, the judges are sycophants and the chefs show the ennui of people who already have their success. Bit boring if you ask me. Sorry.
The Cochon 555 Traveling Show Makes Its Way to Chicago
the whole pig pic is kinda unnecessary as the top photo... I don't mind reading about bacon every five minutes, but as a veggie-serious eater, the dead pig puts me off. Just sayin'.
The Organic Milk Business Has Gone Bad: Are You Buying Less Organic Milk?
I found I was less "intolerant" to organic milk, but ended off switching to soy because it was cheaper....
The Term 'Housemade' Is the New 'Homemade'
Frankly, the term "homemade" on a sign in a restaurant has always bugged me. I mean, no one LIVES at a restaurant, therefore it isn't someone's home. As far as "house-made" I'd think saying it is "made in-house" makes a bunch more sense.

I was wondering if they added a street or something (always possible with Austin construction...)
Thanks for clearing that up conundrum!

Pigs are so adorable and smart!
This is why I went veg, it was that damned cute little "hello snort" and snout nuzzles. Sigh...
Dinner Tonight: Three-Alarm Tofu with Oyster Mushrooms and Spinach
Wok or no, I have similar issues with tofu. Can never brown it just so, and it picks up certain elements of a marinade and not others. But this recipe sounds great, so I will give it another shot!
Served: The Ballsy Waitress
LIkeswords,
I hope you don't mind if I borrow "when bad systems happen to good people" because you nailed it!
Served: The Ballsy Waitress
I wish people would remember that we are all in a recession. Including your waiter, who at my restaurant makes $2.13 an hour.
That, for those with the math issues (seriously?) is slightly over TWO DOLLARS AN HOUR. Half of minimum wage in like, 1998. Plus we get to take our tips and give a portion of that money to the support staff. So if you neglect to tip, the server is paying a portion of their money for you to eat there.
If you have problem with your service/food/whatevs, talk to a manager.
'Top Chef' Season 5, Episode 11: One Fish, Two Fish, Another Bloody Fish
I think Jaime's insulting attitude to Ripert is why she went home. She was trash talking the guest judge!
As for Leah, I hope to see her go next week.
'Top Chef' Season 5, Episode 10: 'Monkey Ass Filled with Fried Banana'
oh, wait, well... I guess I meant to say I was happy to see some tofu in the quickfire (or any challenge for that matter.)
'Top Chef' Season 5, Episode 10: 'Monkey Ass Filled with Fried Banana'
I must personally thank Carla for being able to win with tofu!

This post is wonderful. It helps us get closer to where our food comes from and how people have eaten throughout history. We have become such food retards over the course of the past 50 years. No one is making you eat meat, but you should applaud those that do for being inquisitive and wanting to know just where their food comes from.

Those of us who use an RSS Reader still had to deal with ALL of the photos arriving in the post. Please think and put this type of stuff behind a cut in the future.

I didn't mean for this to get out of hand and all political. I thought the photo was too much for the homepage, which is viewed by a lot of people, some of whom probably don't want to see a skinned lamb whose face it turned up like it's looking at the camera. My comment was directed at the SE editors who completely caught my drift and moved the more explicit photo after the jump.
Keep SE's weird and nasty bits! But the more extreme photos should be saved for the full article, for the animals rights people and those who are just casually scrolling through on their lunch breaks.

@Carey Jones - Please keep posting articles like this. These are the kind of topics that keep me coming here. I find Chichi's contributions have been the most interesting and informative this site has offered lately. This site covers a lot ground foodwise and that's what is fun about it. I don't complain about all the retro junk food or the cake mix reviews so let me have my Nasty Bits, Seriously Asian and butchering articles.

Things are generally interesting, insightful when they are also informative.
I absolutely respect anyone who wants to be vegan, vegetarian or an animal rights activist in WHATEVER fashion they choose to do so. I cannot condone them whining because some parts of food are less pleasing to their eye. Guess what...by showing people how animals are raised and slaughtered under humane conditions convinces them to be more thoughtful about the ways in which they purchase and consume meat...then this is doing you and your political ideals a service.
I cannot believe people have the audacity to complain because a free website does not conform to their own personal political beliefs, but rather, conforms to it's own mandate. If I complained about everythign I found icky on the internet I'd have to quit my job and cut back on my sleeping hours.
Yes...it's a dead animal. People eat dead animals whether you like it or not. They are curious about it and they want to see where their food is coming from. You can't possibly be that precious about it because you're not a meat eater. What is disgusting to you is just that.
Or perhaps you'd all like to write with the hours you choose to eat while browsing the internet so that the editors at Serious Eats can cater to your whims?

@bettyb and others: We believed that this was an interesting look at how an animal most of the world eats is broken down into its components. While we didn't believe the picture of the whole lamb to be offensive, after we received the first two complaints, we immediately moved it after the jump so that it would not appear on the same page. The post is titled "Butchering A Whole Lamb," giving some indication of the photos that appear within.

I'm completely grossed out by this. Yes that was one happy lamb, but now it is one dead, skinned lamb. Your audience also has Vegans/Vegetarians/Animal Rights activists because this blog is filled with interesting content, insight, and places to visit. Yet, I find this post to be somewhat inconsiderate of your outreach.

Again...we're having this discussion again?
Butchering A Whole Lamb, By Slow Foods NYC
I bet people who are grossed out by that picture eat feedlot beef, factory pork and battery chickens. Those are all fine because they come in neat little styrofoam trays. But don't let them see the carcass of what was a happy, healthy, pastured lamb. That's too outrageous.

Help for a picky vegetarian?!
This time of year, when all of the fall veggies are appearing on the shelves, I like to go through the produce aisle or the farmer's market and just pick out vegetables to eat during the week.
So we may bake potatoes and serve with kale and a salad. The kids like steamed cauliflower and broccoli with a cheese dipping sauce and apples. I love all the different squashes, baked!!
Plus I usually make a soup, chili or casserole a couple times a week to have in the refrigerator.

Vegetable soup is always great for picky eaters. You only put in the veggies you are interested in eating. Winter minestrone is good for this time of year, and you can even thicken it to a more stew-like consistency to make it more hearty. I agree with the risotto suggestion as well. And if you like cheese, a potato gratin might be nice.

This community is really full of surprises. But I'm not surprised by this.
I agree with @carriebwc re: bittman's techniques. They could really inspire unlimited ideas.
@climbhighak - howdy capitain! I tend to want to make comments like that sometimes :) I heart pork and could not live without consuming pig meat LOL

when you say you don't lilke milk or eggs, is that also to cook with? i mean, if you make a sauce out of milk or enrich something with eggs, you don't actually taste the milk or eggs? but maybe you aren't eating them for other reasons. just trying to clarify.
try bittman's book on how to cook vegetables.
Help for a picky vegetarian?!
I just made a big batch of burritos for the freezer. No real recipe, but here's what I did...
I used two cans of black beans and added some salsa and cumin, sauteed all that until warmed through. Take that off the heat and add two cooked chopped sweet potatoes. I added enough brown rice until I had the proportions that I liked. Fill burritos with mix, add some cheese if you'd like and wrap individually.
I keep a bag at work and a bag at home.
Other veg-friendly go-to ideas at my place: Lentil soup, black rice and beans, roasted veggie and goat cheese sandwiches.

My wife has similar restrictions (vegetarian, not spicy, no detectable eggs). When we first me there were a lot of foods that she "didn't like". It turns out she mostly just doesn't like the taste of cumin (that took a long time to figure out!). On the other hand, I love all sorts of food. I've found that I can make just about any of my favorite foods if I just limit the amount of cumin and chili peppers.
Most of the recipes I make are found by Googling "recipe vegetarian [name of food/country/cuisine]". Tonight we had a vegetarian Thai tom yum soup (hot/sour soup made w/ lots of veggies and limes/lemon grass).
Other favorites include corn salad with bean, tomatoes and bell peppers. We eat it hot or cold with rice or tortillas. We also make calzones but sometimes with oil, no sauce and less cheese. And we love Asian rice/noodles with peanut or hoisin sauce. You should also try Central and South American vegetarian dishes. Many of the central/South American countries avoid spicy foods.

I made this meal based on something I ate in Hawaii a couple years ago:
it is PHENOMENAL. If you like Asian flavors you'll love it (just omit the shrimp if you don't eat seafood)

I am a vegetarian, too, and I suggest beans of all types. We eat black beans with rice and feta cheese and various veggies for "rice salad." We also eat a lot of chickpeas in hummus, felafels, sandwich spreads, etc.
But, you don't have to eat beans. Tofu is a good and cheap ingredient. You can press it and drain it and then fry it or freeze it or bake it, all of which changes its texture. Lentils are great and filling. I make a simple lentil soup and then when we're tired of that, I boil it down and make lentil patties which freeze really well. Quinoa is another dish we have often. I make ours with tomatoes, peppers, black beans, corn, and cilantro but I'd tried a lot of quinoa recipes. These are all quick and easy dishes to make- without any pasta in sight. Best of luck!
