Obviously it's super hot today, and I was thinking about trying a nice warm weather dish I've wanted to try for a while, hiyayakko. But I don't know where to find tofu fresh enough for this, and am also kind of unclear on the rules for this sort of thing in general.
I get the impression it's only safe to eat really fresh tofu without cooking it - when does it become unsafe? Or am I totally misinformed and can I just use the stuff I find in the grocery store?
Any help would be greatly appreciated!
