6 Fried Foods at the Houston Livestock Show and Rodeo

Just got back from visiting home/the Rodeo - they used to have a stand called "Fried What!?" that would fry almost anything...I definitely shared a delicious-yet-ridiculous deep-fried chocolate covered Twinkie there.Unfortunately, couldn't find it this year - but I managed to fill the void with barbeque baked potatoes.

Molasses Spice Cookies - AMT Recipe Question

So, I'm sure you all were waiting with baited breath to know: I made these again - and they crinkled!

I took in all your advice - single batch, used a hand mixer, and chilled the dough before baking - they turned out beautifully! Thanks for your suggestions and support - I appreciate learning from your expertise.

Happy holidays, and keep on baking :)

A question of online tipping etiquette

So hopefully this is the right place to ask this - today, I ordered a pizza for delivery through an online system. The payment portion offers the option of adding a tip to the final total. In the past, I have generally chosen this option, both because of the convenience and sometimes I just don't have cash.

Today, as I walked out to pick up the pizza, the driver made an offhand comment about a tip. I was a little confused, given that I thought I already took care of the tip on the original bill.

My question is: Do these online tips go to the drivers? I certainly don't want to stiff the drivers, but I also don't want to end up tipping multiple times. I'm not sure if I'm just misunderstanding the system - any advice would be quite appreciated.

Molasses Spice Cookies - AMT Recipe Question

In the attempt to bring some fall cheer to my roommate and classmates tomorrow, I decided to try the America's Test Kitchen Molasses cookie recipe. I tried them once before, made by a friend, and they were amazing! I was hoping to replicate his fantastic results.

So, the problem: the cookies didn't crinkle! They are supposed to crack/crinkle, according to the picture, but mine didn't - and I'm trying to figure out why.

Changes I made to the original recipe:
- No stand mixer in this kitchen, so I did everything by hand [although the recipe calls for a stand mixer]
- I doubled the recipe

The recipe does mention that cookies baked on the top shelf of the over will crack, while ones baked lower in the oven will stay smooth. I did try moving the rack up, and there was slight crinkling, but definitely not the same amount as the pictures.

Thanks!

Cake disasters - recommendations?

I'm a recreational baker, and the proud owner of a new KitchenAid mixer. While it seems I can make decent cookies/brownies/candies, for some reason I have never been able to make a really good cake (especially, for some reason, chocolate cake). I've tried all kinds of recipes from all sorts of sources, but I just can't seem to get it right.
I would really appreciate any tips y'all might have on:

1. Cookbooks or other resources to find solid, basic cake recipes
2. Tips with the KitchenAid - anything you have noticed when baking that makes a big difference?

Thanks, and happy baking!

Meyer Lemon Marmalade

Somewhere between a conventional lemon and a mandarin orange, the Meyer lemon is plump, juicy, and surprisingly sweet. This simple Meyer lemon marmalade showcases the fruit's bold, bright flavor. Try it with blueberry muffins or cornbread. More
