5 Apple Brandy Cocktails from The PDT Cocktail Book

I love Applejack & the jack rose has been a favorite fall drink for years but this year I'm expanding my tastes & have made it the fall of rye. The manhattan is my fav rye drink right now.

From Recipes

French in a Flash: Broccoli Quiche with Gruyère and Cheddar

this is good though needs a lot of seasoning, I also did it with a non pre baked crust for the first time. needed only about 1hr+ so I do think the time is a typo

From Recipes

Super Bowl: Greek-Style Potato Skins

these were great, I also added some chopped pitted kalamatas. they are better crispy so don't be afraid to let them get that way.

Essentials: Baked Ziti

this is great! I use rigatoni as I like a bigger noodle and use leftover red meat sauce

Dinner Tonight: Braised Lentils with Winter Greens and a Fried Egg

I found this a bit dull when I made it tonight. granted I don't love greens but I do love lentils and eggs. It was just ok for me though.

Dinner Tonight: Ramps with Linguine

I just made this for a light lunch and it's really nice. simple, fast and tasty. I LOVED the texture of the breadcrumbs. the only thing I changed is I added some pasta water to the skillet with the pasta and let that thicken a bit before adding the breadcrumbs.

Cook the Book: 'Bromberg Bros. Blue Ribbon Cookbook'

here in Seattle it's Palace Kitchen. Seattle's best burger on brioche or pork and chard plin or spicy wings with cilantro sour cream. Makes me want to stay out late just to go there!!

Cooking From the Glossies: Asparagus and Mushroom Tart

I made these last night to take to a potluck. I cut them after they baked in small rectangles and served as an app. easy and quick!

From Recipes

Pascal Rigo's Goat Cheese Tart with Pears (Tarte au Chevre avec des Poires)

just made this and it is really delicious. the cooking time on both the crust and the pie were considerably more than what is stated. Also the caramel sauce didn't turn out so I used some I had in the fridge.

Is It Time to Take Vodka Seriously?

I always find that drinks made with vodka taste boring and watery, once you replace that with gin you've got flavor!

and if vodka had any flavor it wouldn't need to be infused!

Eats in Japan

okynomoyaki is the seriously the best thing I ate in all of Japan, absolutely agree with that one!

In Tokyo, sushi at the fish market at Sushi Dei was incredible. We had to wait in line for 2 hours at 8:30am. If you get there earlier the wait is only 45 mins. Amazing.

We had a really good and fun dinner at Tapas Molecular Bar, you can see some of my pictures of it here-:

French in a Flash: Coquilles St. Jacques Pot Pies with Roasted Lemon

Made this the other night and it came out quite nice. I would add more vermouth next time and a bit more cream to make the sauce have a more pronounced flavor. Thank you for such a great idea- who doesn't love pot pie? :)

From Recipes

Grilling: Thai Beef Rolls with Sweet Chili Sauce

this is great,, don't make the meat balls too big and I would actually up the flavors in them, maybe add a bit of grated ginger. I served them in a bowl of rice noodles with mint, cilantro and chili lime sauce

Cook the Book: Southern-Style Fried Chicken Thighs with Garlic Cream

I also wondered about the skinless thighs but made them last night and they were DELISH! garlic cream was a bit hit too!

Sunday Supper: Pancetta-Wrapped Chicken Breast with Leeks and Thyme

made this tonight, the flavors are great however the chicken was really overdone at the 35 minute mark, I'd say check it at 25 minutes and go from there. I also only wrapped 2 slices around each breast- I love pancetta but 7 slices seemed a bit excessive...

Grilling: Five-Spice Short Ribs

these are delicious, we made them yesterday and smoked them for about 5 hours. There was a lot of leftover sauce! we'll be making these again!
