Sorry! should have been more clear. It is basically cooked then shredded through the grater, then applied as any other topping before being baked.

But a place that i grew up eating pizza at does what i think is a great trick. The ran the cooked sausage through the cheese grater that they use for the mozzarella. It gives great sausage coverage per slice and gets nice and crisp. Try it. Also works well when you want more then 1 topping on a pie.

Next time you send someone to the King, please send someone competent! "The falafel suffered from my long trip". Really? Did you think it would stay crisp. Fava beans? As a frequent customer of the King i can tell you that it is one of the best falafel in NYC. That was an unfair review!
