The Burger Lab: Turkey Burgers That Don't Suck

Anyone ever tried a "Fatburger" turkey burger? Really quite good! The chain is 50% owned by Magic Johnson and puts out some pretty good burgers.

McDonald's for breakfast, definitely....went ahead and tried their new Angus burger...not bad in a pinch, but still not my all time favorite like "Island's"! Has anyone on this site tried "Islands"? I think they're only in S. Cal and Florida. They home cut fresh potatoes every morning, blanch them in hot oil for six minutes, set aside, then cook to order...puts McDonalds in the shade! And it's 'all you can eat' on both french fries and their superior onion rings. Damn...now I'm hungry!

Not-Boring Thanksgiving Recipes?

There seems to be a dearth of dessert ideas....a favorite that is also a family 'must' is Cranberry/Apple/Walnut pie. It is incredibly delicious and, moreover, easy to make. And don't forget German Noodles! Thick, homemade noodles boiled in a rich beef/onion stock and thickened with flour. Every invitation for Thanksgiving always includes the comment..."yes, I'm making the noodles" and that saves a lot of phone calls from guests. It's that good!

I own a restaurant and trust me, accidents like this happen all the time. The worst part is the distinctive aroma wafting about afterwards! Thank God for good ventilation and air Lysol. And I agree with some of the above comments...the rowdy, screaming, mess makers whose parents just sit and ignore them are the worst. Them I can do without.

I can second your favorable review of Zeke's! I lived in Montrose for two years and Zeke's was my destination of choice when "gottahaveaburger" came over me. And like you, I had a problem with the bun...so I removed the top, squished it with the palm of my hand and, ouila! Problem solved!

Slightly off topic, but it does involve an egg. Congee, a Chinses rice soup is finished off with a raw egg dropped into the hot soup, then stirred to break the yolk and cook the egg. Top it all with fresh chpped green onion and cilantro. Yet another great use of the versitile egg.

Japanese Fusion Burgers from the Marked5 Truck in Los Angeles

Food truck food can be fun, though. It's the attempts at street 'haute cuisine' that fail. In LA..head down to the garment district or the Jewelry Mart areas and try a breakfast burrito from one of the many trucks...especially Alfredo's! Huge, fresh made, incredibly delicious and totally satisfying...and all for $5.50! I've tried some of the haute cuisine trucks...no thanks. Over priced, small portions and usually tasteless.

May I just take this moment to propose that we, as the best arbiters of all things 'Hamburger', consign the brioche bun to the dumpster? Brioche has its place...it's just not on a Hamburger (please note the capitol H)! As I write this, I am waiting until exactly 12 noon before I enjoy my Wednesday Hamburger and fries at my local Hamburger temple. Reality Check: What's the New Pizza Hut Stuffed Crust Pan Pizza Like? We Try It

I started eating at Pizza Hut when I was living in Panama. Yep, we had them there...and they were exceptional. The Burger Lab: Turkey Burgers That Don't Suck

Made a few adjustments. I started with grocery store pre-ground turkey, which I find to be too readily available and affordable to ignore. Next, I cubed and microwaved the eggplant with just a drizzle of olive oil, substituted miso paste for the marmite (I had miso on hand from earlier experiments to make ground turkey palatable), and backed off a bit on the soy sauce. I was afraid the 1-2 punch of both miso and soy sauce would give too strong a soy flavor. Fried the burger with a little oil in a non-stick skillet to an internal temperature of 180F.

No soy, eggplant, or anchovy was detectible - just juicy and well flavored turkey.

It was delicious!

Thanks for the research. Eggplant and anchovy! Who knew?

The Burger Joint, a small new chain in the D.C. area, is featuring the Thanksgiving Burger as the burger of the month.
While their regular burgers look to be significantly better than Five Guys Burgers and Fries, this sandwich should be called something other than a burger, I think. Gravy, stuffing and cranberries do not a hamburger make.

@SkinnyFatty

Yep - roast it whole in the skin, kinda like you'd do when making baba ganouj. The idea is that you want to retain some of the moisture in there. Modern eggplants are not bitter at all - especially the small one called for in this recipe, so you don't have to worry about salting and pressing them. If I wanted to give them a denser, meatier texture, then I'd do what you do: slice them, salt them, wash them, press them, then cook them.

That said - I didn't actually try it the second way. Perhaps it would work as well. If you give it a go, let me know!

AHT Poll: What's Your Favorite Mass Market Burger Chain?

Ok, I had a few beers before writing my last post. I just finished reading it, and I would like to correct/elaborate.

I do understand why everyone hates McD's, and I believe it's primarily due to the inability to admit liking them. Again, they're #1 and it's never cool to actually like #1. In and Out burgers are nothing but a fresh "Big Macs". I say "Meh" to them, and their fries are lousy.

This one will probably get me banned from commenting, but here goes. In fact, most of these places are owned by foreigner's (or recent transplants) who cut corners anywhere they can, either by skimping on product, or running a skeleton crew. Unfortunately, most establishments employ people who ruin the product. They could care less about the quality of preparation. You can complain by calling the 1-800 number, but it doesn't mean shit to them. That's the reality of the local fast-food joints you visit (unless you live in Bumfuck, KS). The truth hurts, but unless you've been a franchisee of a major fast-food joint you don't have room to comment, STFU. Truth to power mother-f'ers! Oh yeah, I love burgers.

From A Hamburger Today

AHT Poll: What's Your Favorite Mass Market Burger Chain?

I love McDonald's. I don't quite understand where all the disrespect comes from, other than the fact that everyone hates a winner. I fully understand as a Subway franchisee and the disrepect I hear from some of my customers, yet, they keep a coming in. McDonald's has a special taste that reminds you of the good part of your childhood. When I was a kid we were only allowed the regular burger. When chicken McNuggets came out I said "Pish Posh", not literally, but I couldn't imagine them tasting good. Oh how wrong I was. McDonald's magic is their ability to create a taste all their own, and don't even bother with the negative comments about their "taste". Numbers don't lie and there's a reason they're #1. They create flavors we all can relate to, and every one in awhile, crave.

I also agree with ALRUI that most establishments (whatever chain) are abysmally ran (out here in San Bernardino anyway). Believe it or not, I don't think In and Out is "all that". Frankly it's a little baffling. What are they famous for, an extremely simplified menu, a 50's atmosphere, non-frozen ingredients, and overrated burgers and fries.

I like Jack in the Box, and Carl's, but I can't find a good establishment in my area. I know full well how hard it is to find good help, but really, most of the employees that work at these establishments (including the management) are loathsome people who have no concept of serving a quality product, let alone providing good customer service.

Burger King and Carl's taste too much like grease smoke, and the funniest thing of all to me is the love for Wendy's. I've been all around this country and the world, and Wendy's sucks ass period. Great concept, but horrible execution. I've tried all their burgers. Hell, I've wanted to like them, but I've never, and I mean never, had a decent burger at Wendy's. I guarantee if there were a blind taste test, they would lose.

Back to my original premise, McDonald's is #1 because of what they serve, food that people actually enjoy. Mock it all you want, but there's that new one just outside the Louvre. I love gourmet burgers, sliders, and fast-food burgers. I love burgers.

P.S. Islands is a great premium burger chain out here, and Red Robin blows!!! Sorry for the rant, but I had to get it off my chest.

A Barbecuer's Cheeseburger at Zeke's Smokehouse in West Hollywood, CA

I got lost on the way there, so I ended up driving past Umami Burger 2X.

The burger came out Med Rare, so kudos for cooking the meat correctly. It was unseasoned, and they barely got any char on it from the grill...this means that the cooks had the flame set too low. The cheese (cheddar) was unmelted, because..............the cooks are incompetent at cooking burgers. Besides, it wouldn't have really mattered. The big, honking, dry, sesame seeded bun overwhelmed the bland patty. I even got all R-rated on this thing and ate it topless. It was still unremarkable in every way. It was just uninteresting and unmemorable.

I bet that they make great BBQ, though.

Overview: Don't expect to get a good burger in a BBQ joint.

Not-Boring Thanksgiving Recipes?

I regularly make a potato dish that treads the line between 'traditional' and 'different': Cider Scalloped Potatoes. Instead of broth, use good, fresh cider so you get a good tang & some sweetness, and then smoked gouda to add another element to the taste. I've done it with regular potatoes, with turnips, with celeriac and even with sweet potatoes. It's amazing and people ask about it years after...

@rondertaker: I'm glad you clarified that, living most of my life in CA I would order the "Super Star W/Cheese at Carl's & when I moved back east it was a few years before I went to a Hardee's & not seeing anything like the Star/Superstar I thought the corporation got rid of it as a menu item (it was about the time the $6 Thickburgers came out). Your comment prompted me to look & compare both the Hardee's & Carl's sites and sure enough you can still get the Star/Superstar at Carl's! They are reallt good fast food burgers. It seems none of the Hardee's burgers have the "special sauce" that Carl's serves on "Star" lineup, shame its good:-)

ummm...well...none of the above. I cannot stomach mcdonalds processed hamburger food stuff. bk flame broiling I taste that nasty charring for the rest of the day and it ain't pretty. wendy's is dry and tasteless even though it is fresh(?) and hot. I did a commercial for carl's junior several years back and ate those damn things for two straight days. never again. sonic suffers from a similar aftertaste effect as bk. and there's just something wrong w/ that cheesy mayoey sauce jack uses.

the real bottom line is that no one can compete w/ in and out burger. better than decent burger at a better than reasonable price. and fortunately for me it is right down the street. when I need a fast burger fix, that's the ticket.

@RisaG, My mom used to do the same thing your husband did. Except she brought us into the bathroom for the spanking instead. We were to understand that going out to eat was a privilege and it could be taken away from us. On the whole, we were well-behaved kids. If we weren't, it didn't take much more than a smack on the bottom to get us to behave. At least to sit still and be quiet. I think my mom's method was pretty effective. It's hard to discipline kids in front of a lot of people. And kids know when they are embarrassing their parents and will take advantage of that to get their way.

I've often overlooked the burger choices at high quality BBQ joints simply because the traditional pork BBQ or brisket there is so good. But it stands to reason that such an outfit has considerable meat knowledge that will be put to good use when grilling a burger.
