Me and my family like to put Edam cheese in super hot coffee, when you finish the coffee the cheese is gooey and covered in sugar. My grandpa used to do it and I think it was something people used to do in PR a long time ago.

Gourmet Magazine Will Fold This Year

So, if I subscribe to Bon Appetit and Gourmet, what magazine are the going to send me? I hope they don't do like when Domino was cancelled, they began sending me Glamour... which I like but is a downgrade in comparison.

I'm going to miss that magazine, I hope that at least they keep their website running.

Costco Will Accept Food Stamps at Two NYC Locations

I think it's great that Costco will accept food stamps. Think about the money people will save on basics stuff like toilet paper, milk, eggs and such. Toilet paper might be $16, but that family doesn't have to worry the rest of the month about buying toilet paper. Now, the problem might be the people that will abuse the food stamps and will use it to buy products that are not basic for a household.

Maybe Costco or NY should regulate what can be bought with food stamps.

I grew up eating the pigs my grandfather raised, he didn't use antibiotics on them and no one ever got sick. But then again, we would cook the pork for hours in a spit until it was falling off the bone. I think the temperature the meat reaches when cooking has more to do with how safe it is than the way it was raised.

Cake Flour

From http://bakingbites.com/:

The general rule of substitution is 1 cup of all purpose flour minus 2 tablespoons (1c - 2tbsp) is equivalent to 1 cup of cake flour. If you want to substitute cake flour for all purpose, use 2 cups of cake flour plus 2 tablespoons (2 cups + 2 tbsp). If you do decide to use this sub, treat the all purpose flour just as you would cake flour (sifting before measuring, etc.).

I like to use it so season ground meat for tacos. I simply brown it, salt it and then pour a jar of salsa in the pot. I let it cook for a while until done but still moist.

Serious Cheese: Counting Money? No, Counting Sheep

I fantasize about it, but it is more about going back to my roots.. I grew up in my grandparents' farm. I miss helping with the hens and eating just picked-from-the tree fruits. When I was a teenager I used to dream about the city live, but now as an adult I miss the country life everyday. Even though there's more sacrifice when living in a farm, life is simpler and more fulfilling.
