Rant: What The New York Times Doesn't Know About Bánh Mì
Just a note about pronunciation and spelling.
Banh mi is always spelled with the 'n' before the 'h'. Vietnamese uses a Latin based alphabet and so the spelling is not a phonetic translation from a different alphabet. It is not like Chinese where you might spell tasty shrimp dumplings hargow, harkau, harkow.
The northern Vietnamese accent would pronounce it 'bang me', whereas a southern accent might pronounce it more like 'bahhn me'. So I can see the inclination towards spelling it 'bahn mi", but it is not an acceptable spelling for the delicious Vietnamese sandwich.
As for the article, (call me biased) but just based on the name in the byline I would not be inclined to listen to the NYTimes for a recommendation on where to find the best banh mi.

These are the best hot dogs. My college bf introduced me to them and have yet to find a better packaged dog. Having moved to Cambridge 10+ years ago, I can't seem to find a comparable dog out here.

I don't think going vegan makes one consume fewer calories. My boyfriend who has been vegan for the past 17 years eats a ton. He also has managed to perfect vegan pizza and other culinary delights (not all healthy, but most packed with veggies and alternative sources of protein and most tend towards ethnic cuisine).
In an effort to bring my world to him, I've reworked many Vietnamese recipes to be meat (and fish sauce!) free. Imagine eating banh cuon without ground pork. That said, he's managed for so long because he loves food: reading about food, talking about food and cooking food. It's definitely not a lifestyle for the lazy.
At any rate, have fun with it!
