Cookie-Stuffed Cookies

I made these last night using my normal triple-chocolate chip peanut butter cookie recipe around 2xstuffed Oreos. Incredibly yummy. They made me giggle.

I did one tray using the entire Oreo. These were huge and spread out a bit. On the next tray I carefully broke the Oreos in half (1 oreo makes the filling for 2 inception cookies). These were more manageable and held their shape better.

Since I bought a ton of Girl Scout shortbread cookies, I'm thinking of making my own peanut butter cookies with them then wrapping them in a double-chocolate cookie dough. Hmmmm.....

I answered French press because I do that fairly often, but most of the time I use my Melitta. Drip brew could mean manual or a Mr. Coffee.

I eat cheeseburgers (no bun) this way: a dollop of ketchup drenched in a tablespoon (at least! - probably more) of Tabasco accompanied by an unassuming dollop of creamy peanut butter off to the side.

(grilled meat + melted cheese) ^ hot ketchup + pb = Yum!

The Caveman Diet

I actually eat and work out this way, and I've never felt better in my life. Since instituting 15- to 22-hours fasts on an almost daily basis, removing just about all grains and legumes from my diet, and doing CrossFit, I've lost 50 pounds and at 2 months shy of 50, am in the best shape of my life.

I'm not hardcore paleo. I eat primarily meat and veggies with a little fruit on the side. However, I am not above having some bread or feasting on pizza. The deal with that is I only eat bread and pizza that I've made myself.

Due to this I have gotten a lot more active in the kitchen as a paleo-centric meal plan really forces you to cook your own food (and that is always a good thing).

What Was Your Biggest Thanksgiving Victory?

Pie!! The first thing Thanksgiving morning I made my first pie, the skillet apple pie I heard about on NPR.

Perhaps not a pie in the strictest sense (one top crust), but still I was quite proud. That, and getting everything else -- turkey, stuffing, green bean casserole, mashed potatoes, sweet potato fries, biscuits -- out at roughly the same time.

But that pie... Mmmmm, yummy.

Roasting a turkey upsidedown helps keep the breasts a bit juicier, but only do that if you don't care what the bird looks like coming out of the oven. It ain't pretty. I'm trying the buttery foil trick this year.

What Did You Eat Today?

For 10/8/9:

1pm: 1C plain yogurt with 1/2 Fuji apple (diced) and a few handfuls of blueberries.

3:30p: The rest of the Fuji sliced, each one slathered with creamy peanut butter. A small bowl of roast pork and gravy (mmmm, leftovers).

7p: Dinner for the family = beef/pepper (red and green)/tomato/onion stir-fry. First time I made this for my tribe, and they fought over the leftovers. A keeper.

9:45p: Two freshly-baked oatmeal-raisin cookies (quality control purposes only!).

Water throughout the day and coffee as desired/needed until 6p.

Cookbook Recommendations Needed

Another $0.02 here:

I have lost 45 pounds since March by removing all grains and sugars from my diet and by working out briefly but intensely five days a week.

Since you're the cook, just make meat and veggies. There are simple and plentiful variations for lunches and dinners (for example, tuna on greens with balsamic vinaigrette, grilled salmon and asparagus, steamed veggies covered with meat sauce, spaghetti squash with meat sauce).

Breakfasts can be fruit, fruit smoothies, yogurt and fruit, or eggs and bacon or sausage (or both!). Dinner for breakfast is good too. Stay far away from cereals of any sort.

Eating this way should both boost your weight and lower his. I'll be happy to pass on any particulars if you wish. Hope this helps.

How do you control your food cravings?

I try to stick to mostly a paleo diet (yay meat and veggies!!) along with a daily 15-20 hr fast, but I still have the occasional craving for a pb&j or a large oatmeal cookie. Like just about three minutes ago.

Apple slices with peanut butter always does the trick for me. And it just did.
