you're all missing the point- of course they're easier and cheaper and more fun to make from scratch- but Ina is trying to extend her brand and has run out of ideas for mixes. Unfortunately, there are plenty of people who would be willing to pay $11 for this mix, and yes, probably as a gift. The $11 goes mostly to packaging up all the separate parts, putting them in the box, designing and printing the label, shipping them, etc. It is a complete waste of time and packaging.

Crisco is not animal shortening- most baked goods made with shortening are made with vegetable shortening. Lard (animal shortening) is used rarely these days, and probably never in commercial products. Some people like the meaty taste of lard, in say, an apple pie crust, but I am a butter girl myself, occasionally adding a little Crisco (directly substituted for some of the butter) in pie crust.

turkey with cheesecloth

Using cheesecloth soaked in a mixture of butter and wine will turn out a beautiful bird, probably with a slightly moister breast- just make sure the cheesecloth never dries out, or it can catch fire!! Also, I will second Alex's comment about opening the oven- of course you have to open it periodically to baste- if you can, take the turkey out and out it back in, or you will lose all your oven heat. I think this is the main reason it takes people 8 hours to roast a turkey!

canning supplies available in NYC?

Actually, the store on 17th st. DOES exist- it's on the north side of the street close to Tisserie under a scaffold. It's hard to spot, but it's a somewhat dingy restaurant supply place that has almost everything. Another good bet for canning supplies would be Home Depot or Zabar's upstairs. Too bad about Ball- I agree on that one.

Growing up Dad called it a Bulls Eye (from Rhode Island). We always loved when Dad had to make breakfast! He cut the hole with a shot glass so the hole was just big enough for the yolk part and the rest of the egg ran over the bread so you had to flip it and cook that side too! Just don't over cook it and it won't be dry. The hardest part was buttering both sides of the bread. I get around that now by using a brush and softened butter.

Ritter Sport has always been my favorite Milk Chocolate. If you want a little more quality you should try Ritter Sport Alpenmilch (Alpine Milk).

Another good milk chocolate is Milka (from Germany also).

Another reason to buy Ritters besides the great taste and handy shape - it is fairly low in carbohydrate and you can break off the appropriate number of "squares" that works into a Diabetic food plan.

Also, for sheer cheapness, the chocolate bars sold at Ikea are really yummy. Haven't got any at the moment to check for name, but it is the only brand they sell, probably something like, "Berskolitz" or "Iglun!"

I don't know where you are writing from but my alltime favorite (55 years worth) is See's candy. They are on the West coast and fantastic.So creamy, so chocolately, no fakiness. Their truffles are stupendous, white, dark or milk chocolate. They cannot be outdone by anything except for a few things that Moonstruck (Portland Oregon) chocolates has produced.The pecan rolls or molasses chips are possibly my favorites, or maybe the keylime truffles with white chocolate, gooey carmel turtles with almonds or anyone of them at certain times of the month. Give them a try (they mail) you won't regret it.
