15-minute Creamy Tomato Soup (Vegan)

Finally got around to making this today, and I thought it was superb. I wanted to be a bit more virtuous, so I used Ezekiel bread, which worked out great. Also, I used my immersion blender instead of blending it in batches. The flavor was bright and beautiful!

What is the most expensive/least used tool in your kitchen?

It's a toss-up between my Cuisinart Food processor and my Kitchenaid mixer. Just thinking about it makes me sad :(

Supermarket Smackdown

I live in the southeast, and while I think Publix is great, I also find it to be pretty darn expensive. I'm originally from NYC, so I have a special fondness for Pathmark and A&P. I also love the Fresh Market, despite the fact that it is woefully overpriced!

I have actually folded fresh pesto into quinoa and it was quite delicious.

International Desserts!

My husband is Puerto Rican, so I've learned to make a lot of Puerto Rican dishes over the years. One favorite is Tembleque, a delicious coconut pudding. It's very easy to make and impresses all his relatives every time I make it:

4 cups coconut milk

½ cup of cornstarch

2/3 cup of sugar

½ tsp. salt

1 tblsp. orange blossom water (optional)

ground cinnamon


In a saucepan dissolve cornstarch in 1/4 cup coconut milk.

Once dissolved, add the rest of the coconut milk, sugar, and salt. Cook at medium-high heat stirring constantly. As it thickens, lower heat until it boils thick. If you cook it too long after it gets thick it might get lumpy. If that happens just take it off the burner and continue stirring vigorously until all lumps are gone.

Pour right away into wet glass dish, pan or molds. This one is an odd size 10 x 8 inches. (13 x 9 is too big and the squares will be too short.)

Cool, cover with plastic wrap, and refrigerate for at least 4hours.
Sprinkle with cinnamon and carefully separate the tembleque from the mold and slice it into squares using a wet knife.
Makes about 12 servings.

Favorite Yogurt

I was such a Fage lover when it first came out. I used to buy the nonfat plain and mix in Bear Naked granola with a dash of agave. But Noosa steered me away from Fage big time. I think it puts just about every Greek yogurt out there to shame. So creamy and delicious, there's very little to compare to it in my opinion.

Meal Replacer Bars

I like Kind bars a lot, especially because of the variety of flavors they have, but not sure they can be used as a meal replacement - they average about 180 calories each - more like a snack.

I really like LaraBars. They are usually sweetened with dates and have no added sugar. The peanut butter cookie flavor is especially good. They are usually around 200 calories each. I also like the Greens Plus bars, but they are an acquired taste.

ProBars are a meal replacement bar, and pretty high in protein.

Coconut milk lovers, anyone?

I love to use it in soups for creaminess and in red and green curries. I crave that stuff.

Favorite Yogurt

I've tried Wallaby's before, a long time ago. They have some nice flavors.
Never tried Brown Cow, although I've seen it on store shelves. Guess I'll need to do that.

This really does sound easy, and fairly healthy as well. Can't wait to try this.

What is the best food in the world?

Anything I'm seriously craving at the moment....for example...juicy pork and chive dumplings, cheesy grits, fried chicken, pho, juicy lemon roasted chicken, fresh mozzarella and prosciutto, red or green curry with vegetables and brown rice, BBQ ribs, dry aged steak - there's never any one food I could possibly say is the best in the world.

Favorite Yogurt

I love yogurt and am always on the lookout for new and interesting ones. So far the ones I like best are available locally to me: Noosa, Liberte, and Muller - I have tried the FrutUp and just purchased the Muller Corner, which is sitting in my fridge, waiting to be consumed.

I basically love creamy yogurts (not nonfat ones). Are there any other brands that are comparable?
