What are your variations on cornbread?

My favorite cornbread recipe is just the basics. A cornmeal mix, egg, and sweet milk, a little oil and bake in a hot oiled, cast iron skillet.
But my kids love the taste of Jiffy mix. But when I make jiffy mix it always seems to fall apart while slicing or after it's on the plate. It tastes great but is so fragile, it must be eaten with a fork.
Can someone tell me what I am doing wrong, or could that just be the nature of Jiffy mix? I follow the directions to the letter and bake in my cast iron skillet.

Johns restaurant in downtown, Birmingham, Al. had the best corn muffins I have ever eaten.
A secret recipe that would just melt in your mouth. They were light, crispy, airy and full of flavor.
I have tried many cornbread recipes in hopes of duplicating that texture and flavor, but no luck yet.
My cornbread is just sad compared to Johns.
I really need that cookbook, just ask my family!

I have to admit, mine is the best I've eaten. I just use a yellow cornbread mix (usually Martha White), add Pace's Picante Sauce, grated cheddar cheese and whole kernal corn. Extra cheese goes on top. Yuuummmy! For restaurant cornbread, it has to be Mama's Daughter's Diner in Lewisville, Texas.

Jiffy Mix made in a preheated cast iron skillet, greased with some bacon drippings. I love the crusty brown portion! Gotta eat it with real BUTTER! Thanks for the opportunity to participate in this giveaway!

My favorite cornbread was my mother's. She started it in a cast iron skillet over a flame then finished it in the oven. Sometimes she added cracklins. Awesome!
