Egg in Toast: What Do You Call It?

Great Mexican in the city

When I first moved to NYC (1984), I craved Mexican food and was delighted when I finally discovered a Mexican restaurant. I ordered cheese enchaladas with a mole sauce. I was served cheese enchaladas but I swear the mole sauce was Hershey's chocolate syrup.

Although I no longer live there, it sounds as if NYC Mexican restaurants have come a long way.

Served: My Plea To Tip Kindly

Once while tending bar at a smallish neighborhood pub, a gentleman seated at the bar left a few bills on the bar for me and went out the door. The man seated next to him, wide-eyed, snatched up the money and followed him out the door yelling "Hey Mister. You forgot your change." (Several other patrons, and me, watched open-mouthed). Shortly, the man returned, put my tip back on the bar and muttered something like, "he said it was for you."

The Most-Stained Cookbooks

"With a Jug of Wine" is certainly one of the most well-used books in my collection. There was so much spillage that my dog pulled it down from a low shelf and tried to eat it. Most of the spine and title pages are gone (and it was pretty bedraggled when puppy got to it) but I hold it together with rubber bands and masking tape. I believe my edition is from the early '50s.

Growing up Dad called it a Bulls Eye (from Rhode Island). We always loved when Dad had to make breakfast! He cut the hole with a shot glass so the hole was just big enough for the yolk part and the rest of the egg ran over the bread so you had to flip it and cook that side too! Just don't over cook it and it won't be dry. The hardest part was buttering both sides of the bread. I get around that now by using a brush and softened butter.

I know I'm late to contribute, but I wanted to share my story. When my fiance and I first started dating I won him over with leftovers! Our first date actually lasted longer than either of us had planned so I offered to make something when he said he was hungry. He said he was fine with leftovers. They happened to include Blue Cheese Macaroni and Cheese and he was smitten. Both with me and with the recipe.

The first meal he made me a week or so later on another date was amazing. Roasted Cornish Game Hens stuffed with wild rice and portobello mushrooms, mashed potatoes, perfectly sauteed green beans...it was fabulous. And he really won my heart by making an extra serving for my roomate who is a definite foody. He won her heart too and she gave me two thumbs up and told him that he had her approval. Six years later we're still cooking for eachother and together and planning a wedding!

Cut two holes in the bread and drop in two eggs and call it " here's looking at you" You could even put at the bottom a piece of bacon for the mouth- curve it upwards at the ends to make it smile.

gueralinda....sorry, Toad in the Hole is a banger/sausage in Yorkshire pudding batter. I'm English, live in England and eat Toad in the Hole at least twice per month. Bubble & Squeak is another favorite of mine....but that's off topic.

Actually, in the interest of sociology, we should all be putting the source of our name here as well, for example, my Dad called them toad in the hole. He grew up in the tri-cities, WA, and is of scotch-english background.
