(I posted to the wrong article) My immediate thought was bagels, lox & cream cheese - but I think I'd take cheese blintzes with sour cream instead!!
What a question! Bagels lox & cream cheese of course! Then again - cheese blintzes are great too.
I have to narrow it down to ONE? I love a good homemade buffalo mozzarella and manchego. And of course I love a little pasta with my parmesan-reggiano.

That's a tough one. Naturally a good bagel (plain of course) with cream cheese & lox. But coming in at a close second is an lox and onion omelet.
There are as many recipes for potato latkes as there are for kugel or chicken soup. Lippy, duck fat? Why not just fry them in chicken schmaltz? Although I must admit it does sound delicious, you can't serve sour cream on them as they become a meat dish. (If you're kosher). Really, you need to experiment. Over the years I've found that matzoh meal works better than flour and the potatoes should be as dry as possible and come out better if shredded, not grated. Also (and I cannot stress this enough) the oil MUST be hot! There's nothing worse than a greasy latke!

I've admired the Zingerman's catalogue for years, but I've never gotten anything from them....but I'd really love to!
Manchego, a good Parmagiano, or very sharp Wisconsin cheddar.
I love any white cheese.. white american, any of the mexican cheeses.. plain ole farmers cheese (yes I know Its boring!)
I'd have to say horseradish cheddar (though I'm also a big fan of brie and muenster).
Freshly grated Romano cheese on pasta, salads and meat dishes.
