As you surely must know, it's been "Goat Week" at Modern Farmer magazine. And the "Goat Cam" is being held over by popular demand.
In an article on the website, I learned that goat is the most consumed meat in the world but makes up less than 2% of the meat eaten in the United States.
Which may account for me finding so few recipes.
I'd appreciate tips of how to grill, smoke and braise it and which cuts I should ask for.
