Dinner Tonight: Iceberg Wedge with Warm Bacon and Blue Cheese Dressing

Where is all the love for Iceberg, the crunchiest of all lettuce heads?

What, you want spring greens on your tacos? Wimpy Romaine on your BLT? Arugula in your Halushki?

Like cheese, different applications require different types. Iceberg has a fine place in the line-up of lettuce and the wedge salad is one of them. And yes, blue cheese dressing is ALL about the FAT! Hell yes, add bacon!

This is not a spring green salad with a low-fat vinegar dressing. This is what goes with a perfectly seared steak, prime rib, or a sandwich made from either.

The iceberg is here to contribute that crunch factor while the bacon and blue cheese provide the key components of flavor. If you're not about bacon and blue cheese, don't hate.... skip it!

As for the recipe... great. If you want it a little thinner, add more FAT! Milk or cream make a wonderful thinning agent.
