Chinese-Muslim style stir fry thin potato slices

Anyone ever had the super crunchy thin potato slices they serve at Muslim noodle houses in China? I'm trying to recreate it. I'm guessing low starch potatoes cut really thin like they did and soaked in salt water, but do they blanch them?? Any tips please?
