I' about to go make some étouffeé, so I'm going to do a taste test. I have Tony's, Slap Ya mama, and Zatarain's Creole Seasoning (not the cajun seasoning). I'll let y'all know what I find.

Pizza delicious is very out of the way, and only open on Sunday (not the most convenient day for picking up food out). Nevertheless, they are one of the better pizzas in the city. The only places I prefer are Slice and Mondo (although Domenica is right on their heels).

I refuse to eat crawfish when they are out of season (Season is usually from around Mardi Gras until the end of spring). If you have crawfish out of season it means they are either frozen or asian, or in all likelihood both. As much as I love Popeyes, I will not eat crawfish out of season.

I get my pizza from a place here in New Orleans called Slice. It has two locations. The original is on St. Charles Avenue (yes, right on the streetcar line) and another one further uptown is on Magazine Street.

The oyster harvesting system in Louisiana has such thorough oversight, by 2 state and 2 federal agencies that sitting in a restaurant you will NEVER be served a contaminated oyster. Furthermore, about 1/3 to 1/2 of the oyster beds in the state were not effected by the oil spill. Moreover, we have the BEST oysters in the world down here on the gulf coast.

I eat strings for a while, until I get bored. then i just eat the rest in bites.

Alas, there are none in the New Orleans Metro Area. Local produce is in such high demand that the farmers can make much more money by selling to distributers.

Use parchment paper inside of foil. the parchment paper will provide the correct flavor, while the foil will seal it. Also, the dish is not actually French. It was invented at Antoine's Restaurant in New Orleans, and the traditional fish for the dish is Pompano.

I remember my parents taking me into "the old grocery store with the double screen door." I'm not sure which (as there were many then, and very few, if any, now). It was nice weather, proabably a saturday in spring. I had a roast beef poboy (or probably just a piece of one) and a Barq's longneck. Either that, or crab claws and gummie creatures at Brunnings on the lakefront.
