What's So Great About Tony Chachere's Creole Spice Blend Anyway?

I' about to go make some étouffeé, so I'm going to do a taste test. I have Tony's, Slap Ya mama, and Zatarain's Creole Seasoning (not the cajun seasoning). I'll let y'all know what I find.

New Orleans: Head to Coop's Place for Po' Boy Burgers

Coops is a tourist trap. I've lived in the city all my life, and ever other New Orleanian I've know to eat there has only done so once. Hamburger Poboys are sold all over. Personally I think the best variation on that is at Shortstop. Nevertheless, we have so many good regular hamburgers (Port of Call, Bud's Broiler, Camellia Grill, Fat Harry's, the Beach Corner, Luke, and newcomers Cowbell and MVB) that I hardly get the hamburger poboy. Another tourist trap that one should be warned of if search for burgers is a place called "yo mama's" - please try to avoid this place.

One to Watch: Pizza Delicious, New Orleans

Pizza delicious is very out of the way, and only open on Sunday (not the most convenient day for picking up food out). Nevertheless, they are one of the better pizzas in the city. The only places I prefer are Slice and Mondo (although Domenica is right on their heels).

We Tried Popeye's Fried Crawfish Special

I refuse to eat crawfish when they are out of season (Season is usually from around Mardi Gras until the end of spring). If you have crawfish out of season it means they are either frozen or asian, or in all likelihood both. As much as I love Popeyes, I will not eat crawfish out of season.

Where Do You Get Your Favorite Pizza?

I get my pizza from a place here in New Orleans called Slice. It has two locations. The original is on St. Charles Avenue (yes, right on the streetcar line) and another one further uptown is on Magazine Street.

Knife Skills: How to Shuck an Oyster

The oyster harvesting system in Louisiana has such thorough oversight, by 2 state and 2 federal agencies that sitting in a restaurant you will NEVER be served a contaminated oyster. Furthermore, about 1/3 to 1/2 of the oyster beds in the state were not effected by the oil spill. Moreover, we have the BEST oysters in the world down here on the gulf coast.

Cook the Book: 'Mary Mac's Tea Room'

My most memorable Southern Dining Experience... hmmm, this one is hard, because I live in the South. I could say my Bachelor party at Antoine's, but that is Creole... How about the home cooked spread at my wife's friend Leigh's wedding in Seminar, MS.

I prefer rye to bourbon (my favorite drink is a sazerac), but only bourbon will do for a Mint Julep (my favorite bourbon drink). I'll be drinking them on sunday while watching the derby. I'll be using bullet bourbon to make them

Poll: Are You Joining a CSA This Year?

Alas, there are none in the New Orleans Metro Area. Local produce is in such high demand that the farmers can make much more money by selling to distributers.

Cook the Book: 'My New Orleans'

Being Bred, Born, and Raised in New Orleans I have a tough choice. Things like crawfish, pontchatoula, strawberries, satsumas, french bread, Gumbo, Boudin, and Abita Beer all come to mind but I think Speckled Trout stands out above the others. fried and served with meuniere sauce.

French in a Flash: Cod en Papillote

Use parchment paper inside of foil. the parchment paper will provide the correct flavor, while the foil will seal it. Also, the dish is not actually French. It was invented at Antoine's Restaurant in New Orleans, and the traditional fish for the dish is Pompano.

Cook the Book: 'Real Cajun'

I remember my parents taking me into "the old grocery store with the double screen door." I'm not sure which (as there were many then, and very few, if any, now). It was nice weather, proabably a saturday in spring. I had a roast beef poboy (or probably just a piece of one) and a Barq's longneck. Either that, or crab claws and gummie creatures at Brunnings on the lakefront.
