Definitely Gorria in Barcelona - Basque cooking featuring crisp skinned suckling pig, the soupy pork enhanced white beans called Pochas de Sanguesa, and fried custard for dessert!
Zuni Roast Chicken Update
Good luck with the Zuni chicken! I made it and it turned out very well - the salting in advance really seems to work wonders. I didn't make the bread salad but surrounded the chicken with sliced potatoes which soaked up some of the juices and fats from the roasting bird.
Best Cream-filled Donut in NYC is Currently Not Available
As a temporary New York resident from another country, and a doughnut lover, my biggest concern with the doughnuts here is that they are served cold! Good as the Bouchon Bakery ones are and Doughnut Plant et al, how much better would they be if still warm from the fryer! As a deep fried product I think a lot of the magic of doughnuts ebbs away each second they're out of the oil. In the country I grew up in the major doughnut chain will still cook their (cake) doughnuts to order, meaning often a wait of a few minutes but well worth it!

Great report Ed, the only thing to query is I think that the country ham at lunch on Saturday was not Benton's but was another source (Newsom's?).
